Interesting recipe and I happen to have two big sweet potatoes in the fridge that I cooked last night. I wrote down the recipe along with some ideas I had about possible variations. Burmese Sweet Potato Pudding 2 lb cooked sweet potatoes, cooled and mashed 3 oz coconut milk, optional ½ cup sugar 10 oz milk 5 Tbsp corn starch 7 oz milk 1. Puree sweet potatoes and coconut milk. 2. Mix in sugar and 10 oz milk. 3. Heat in a pan, stirring frequently. 4. Make a slurry of corn starch and 7 oz milk and whisk slurry into simmering potatoes. 5. Simmer a few minutes, stirring until smooth and thickened. 6. Pour into a glass dish, cover and refrigerate until chilled and set up. 7. Turn out onto a plate or cutting board and slice into 1 ½ - inch cubes. 8. Roll sweet potato pieces in coconut. Changes I might make: Add ¼ tsp salt along with sugar. Replace the 10 oz milk and sugar with a can of sweetened condensed milk. Add pumpkin pie spice while simmering. (Similar to a sweet potato pie) Add 1 tsp vanilla after simmering and before pouring into dish. Simmer pandan leaves with the potatoes or add pandan flavoring.
