Gash you’re a total legend and the reason I now brew 50L all grain batches every other week. Thanks for the recipe, mate. Still kind of a noob, but definitely one of my best 2 or 3 brews. My only changes: I used S-04, cut the cacao down to 50g (already pretty chocolatey), added 100mg maltodextrin to give it some more body, and only added 1 pod to the boil and then 2 pods+vodka to fermenter... Fantastic stuff, now I just need the discipline not to drink it too quickly, as I have a feeling it will peak in 2-3 months time. Thanks for sharing, you channel is absolutely awesome!

Great video Gash. I've used this kit a couple of times. One was very similar to yours. Had cacao nibs, cocoa powder, pure choc extract, but I really liked your use of the vanilla pods. Spot on saying it will help balance the bitterness. I bet your beer ages extremely well. I've got a couple of bottles going on 6 months now and they get better all the time. Cheers man
Thanks mate, ummmm about two years ago I did a very similar one to this but no vanilla but added some chipotle smoked chilles to it, still have two bottles left, I will have to open them soon! :)

That vile is slick. I always use jars, but that vile has so much less head space in it. I agree that too much vanilla is not good, too sweet. Awesome video Gash, cheers!
cheers mate! yeah its the vial the pods came in! actually both the two different brands I had came in vials. and agree I think I said the vanilla wasn't there for vanilla flavour but for a chocolate type sweetness, if that makes sense lol . Thanks Dan
Did this recipe with the only one change , i added 2 vanilla beans in the boil and none later and used cacao powder instead of cocoa powder. added Vanilla extract in the keg. I didn't really like it very first day before i kegged it as it was very bitter and more like expresso coffee, but 5 days in the keg and it has started to taste heaps better already. More flavours are coming out and is very easy to drink. i think with little more aging for few weeks, it will be a great beer. With recipe it turned out to be 4% ABV.
I never brewed up a stout but have made dark heavy beers. I must try this one Cheers Gash
Cheers! I hope with the knowledge and experience i can see you have that you do an all grain brew! If you haven't all ready. You posses the experience and skills to go All Grain! And you wont look back once you do!!! The absolute knowlege of creating a craft bear all by yourself that you designed is a work of art! You understand cold crashing and clearing. Too be honest it doesn't matter about the recipe it will be good what ever you do. I use Beersmith 2.2 software to design my brews it a great tool. Good luck with all your future brews it takes me back to LME watching this video. Your kknowlege is too advanced for LME, DME its All Grain for You

well i finally made this and just kegged it today,i followed your recipe just as you made it,vanilla beans and also soaked two vanilla beans in Vodka, Cheers..will try it in seven days

I have made kit brews a little while. Bit embarrassed I have done full mashes yet, but no-one can tell!
Try this one out, I call it the black adder death stout :
1x Coopers basic stout kit
1x 1kg Coopers light malt powder
250gr lactose
500gr Belgium candi syrup
Steeping cracked grains 200gr Choc malt, 100gr Chrystal malt, 100gr Roasted malt
pride of Ringwood after the grains are steeped and all malts boil for 5mins
I used cultured yeast from coopers sparkling ale
I toped up the fermenter up to 20ltrs which I got from a local water filtering machine
That sounds blood great mate! Cheers!

Any decent stout can should be ok! I have only used Coopers Stout though, but there are many different ones! Cheers!

Going to have a go at it as soon as one of my FV's is empty (3 are currently fermenting European Lager, Pale Ale, and a Mexican Cerveza) them three and this one should be enough for my fortieth I hope :)still have 3 months so plenty of time to brew and condition, and it would be a sure hit with my family and friends.

Awesome video. Yeah with a few added extras you can make a tin go a long way. Morgan’s tins are a bit more expensive but they’re pretty convincing. Nice frenzal shirt btw

Dry hop was the same as the other adds, 15g/10g, but that could easily be raised too 60g/40g or anywhere in between! Cheers!
looks like a really nice stout mate will have a go at it, but i don't know about putting two stout tins in thinking of trying just the one. great video :)
StillTotaly mad I only used one stout can, the other can is just Liquid Malt Extract (Dark). Cheers mate!

I dont like coffee in beers but if its your thing go for it! Lactose will help with the sweetness chocolate thing . Cheers!

You need to try and rid the sample of oxygen, so better to use vodka, or treat with Metabisulphite
Great video. Probably a dumb question, where are the hops involved in this process?
The only hops in this beer were for bitterness and that was done when the Coopers tin was made, in other words the Coopers beers are hopped (usually called "prehopped tins" already for bitterness, you only need to add more hops if you either want more bitterness or some fresh hop aroma, since this was a stout and I was concentrating on the chocolate and vanilla no extra hops were needed. I need some advice. I pitched this and it has been sitting at about 21C for a week. It was bubbling away cheerfully on day two, but then at day three it was down at SG 1.018 and a few days later it's still at 1.018. Isn't that a bit high? Should I do something to it in the primary? Stir it up to see if it'll start back up, or should I transfer it to another fermenter with sugar and bottle it? Really could use an answer, so if you have the time I'd sure appreciate it :) Cheers

Interesting video. Just wanting to understand your interpretation of the difference between dry and liquid malt extract? Is there a difference (apart from the obvious - water)? What is the advantages and disadvantages?
G'day. Liquid Malt is better and less refined but hasn't got the shelf life of Dry Extract. If I could get fresh liquid extract I would use that over dry extract everyday. You can still make great beer with dry though of course. Cheers!

+manosox yes you would, less then normal about half, if you are going to decant it with CO2 (gas) but if you dont have a gas tank, how are you going to serve it? Cheers!
I was thinking using those 5 liter kegs you see in the stores. Those are the only ones beside bottles that fit in my frisge.
So I've finally got round to doing this recipe.
I am going to add cherries in secondary but I wondering do you think coffee would go well in there too?
I dont think coffee goes well in any beer lol but if you like it go for it, it tends to take over though so go easy, Cheers mate!
Gash, i made this the other day. It has been in the fermenter in the ferment fridge for 3 weeks. The OG was 1.050. For a week it has been stuck at 1.022. I used just one packet of the Coopers yeast. Should i throw a packet of SF-05 into it and see what happens or just keg it as is live with a mid strength stout? I’m probably leaning to the latter, but I’m just going to have to chew through 20l of stout. Most my mates are not big fans of darker beer.

hmmm being extract it shouldnt finish quite that high, but might taste nice with that much body.. You could pour off a cup or so into a jar and add some old yeast if you have any laying around, give it a good shake and put it some where warm for 24hrs and see if the reading drops, if that drops then you know it may be worth adding more yeast.. In the meantime can you maybe raise the temp up a bit? What temp have you been brewing at? Cheers!
Do you add in anything when you transfer it to the keg? I have done kits in the past which tell you to add sugar at the same time you transfer it to a keg? I'm not sure what to do as I've not tried to enhance a beer kit before using grain and malt extract.
The dark malt extract replaces the sugars, though you could add a little more if you really wanted too. Cheers!

sorry I thought you meant fermenter, no sugar needed at all in the keg, unless you are naturally carbonating it. Most people dont they use CO2

(300g total)Will the hops be necessary?Also would you recommend boiling the wort with the enhancer in a large saucepan before putting in the fermenter? reason I ask is ive seen a guy doing a vid doing this (albeit his saucepan looks bit small)saying it helps with killing off bacteriasoz for the essay but just want this batch to be a bit fuller in flavour and body. +oily tick You can steep them them together and they can be in the same bag but don't boil them! Remove the grains before you boil. Hops wont be necessary as they may cover the subtle flavours you get from the vanilla, but its up to you. Coopers enhancer straight from the bag doesn't need boiling, most packaged stuff doesn't, if your shop packages it themselves I might consider boiling it. Cheers!
I just pitched this brew today. Added about 150 grams of Licorice syrup and 4 cups of espresso. Dark it is. Can't wait to try it.

+pig eh hmmm I like the coopers drops for ease of use. I don't think they over carb if your beer is completely fermented out before bottling, but if you are after a certain carb level you may need to use sugar, or just one carb drop per long neck, really depends what you want, maybe do a mixture, sugar in some, 2 drops in some and a single drop in some?? and see which method you like better? I've never added vanilla pods but the best beer Imade was a Mexican with raw sugar cane.

G'day, Not sure what amount you brewed it at. If its 23 Litres you want about 135g of table sugar, or 150g of Dextrose. If you went to 19L you want about 112g of table sugar or 123g of Dextrose. If you are doing it by the bottle just the usual you would add. Cheers!
Hey mate. I'm making this brew at the moment after watching your vid. I'm not going to crash chill my beer and was just wondering how long after adding the vanilla vodka would you leave before bottling? I pitched my yeast at 24 degrees and it's day 3 now and looks like things are coming to an end on the fermentation front. Also after having the lid off to add the vodka should i add a bit of sugar to get some Co2 happening again? Cheers :)
G'day, if it's finished fermenting you don't need to actually leave it any set time. Depends how you are bottling I guess, if using a bottling bucket/fermenter the transfer/racking will make sure it's mixed in enough, if not just leave it a day, or give it a gentle stir with out stirring up the yeast cake. Great video, I like your fermenting container , I have been using five gallon plastic buckets with a bubbler . I notice you don't use a bubbler and your lid just lays on the bucket. A big hassle with the five gallon buckets is snapping the lid on and having to pry it open. Does your lid let your fermenter vent without having to use a bubbler? The only one I have been able to find that looks similar is from a Mr Beer kit, is that where yours came from?
G'day, yes it does let it vent without a bubbler. This was from a Coopers Kit, Coopers own MrBeer but not sure if they use the same equipment as I havent seen the MrBeer one. Cheers mate!

Sorry mate, I know nothing about that, I bought it in a starter brew kit, was 50% off because the included Coopers Can would of been going out of date. It also had 30 PET bottles, plastic hydrometer and a few other things. How you finding the bitterness from the cocoa powder, I used bakers powder and found 100g was to much, might try something else next time, cheers
I found this to be really nice, I'm not 100% sure if it's a little more balanced because of the Vanilla or another reason, could even be because of the raw cacao?? But I don't find this too bitter. Cheers mate!
Deffo giving this a go, just ordering the ingredients as i type! One quick question, what sort of chocolate malt did you use? I can only find wheat chocolate malt, but I presume you used barley chocolate malt. Am I correct?
Yes I did use barley malt. Thats is strange you can't find chocolate malt. I guess you could try the wheat malt, I've never tried it. Cheers!

love the idea of using vodka to sanitise additive flavours, something I never thought of. Do you think it work with Lambic ales as well? Reason I ask is when I find someone needs a little intro to stout I give a shot of blackcurrant cordial. I'm wondering if I use blackcurrant jam with vodka when I keg and leave it rack at room temp for a week for second ferment. Experiments with beers, be great to get your thoughts. Another is when I was young years and years ago, I use to put a shot of Kahlua to my stout if I had a big night out prior(hair of the dog). I am thinking instant coffee, vanilla with the vodka when kegging, Hmm.

G'day Mike, hmm never thought about using jams, I would think that if you bought a new jar it would be just about sterile when first opened from the canning method, but I've used it on cacao nibs and coconut as well, worked well! Sout with kahlua mmm might have to try that. I guess you could heat the jam too if worried.

Thanks very much for your reply. Sorry to hear of your loss. Mate your knowledge of brewing is a credit to you and a inspiration to others. I have tried a light ale with blackberry jam ( Cottes 500g) I boiled it and strained before adding to first stage ferment. It works and taste fine with only a hint of blackberry, however I would up the anti maybe 2 jars and use the blackberry for stouts and maybe use raspberry for the ales. I fined that the jams which has gone through a heat process, makes the sugar more fermentable, ( with no cindery after-tones). I would like to try the jams for a primer use, the jam for sugar for second ferment bottle conditioning (I feel there may be fire works on of the liquid proportion).

Great recipe! Just a question, how do you prime this? I'm new to brewing so I still use carbonation drops. How many drops should I use per bottle?
I used just the normal drops for carbonation, 2 for a big bottle (750ml), 1 for a small (375ml) Cheers!
Hey Gash I'm going to make this tomorrow. What's the alcohol content in this? Would it hurt the mouthfeel if I added about 300g dextrose to bump it up a bit?
Also, is one packet of the kit yeast enough? I was thinking 2 would be better, rehydrated as well. What do you suggest?
at 19L (5G) its about 5%, adding some dex will be fine! 2 yeasts is always good and so is rehydration! Cheers mate

Great video indeed. And I have been watching it for a couple of times. And trying to copy your recipe in next week after getting all my ingredients. Just a simple question to ask, I don't have a second fermenating keg, but I want to bottle the beer after 1st fermentation, is it possible? Or do I need to put bit sugar in the bottle for bottling?(I did an coopers European lager couple of weeks ago, it needs a bit sugar for bottling, do't know if it is same with stout)Many thanks mate.

Thanks very much for replying mate, i did manage to find some information about the sugar, yes, i did put about 1.5 grams sugar/350ml. And i am trialing your Australian Pale Ale receip, and it has been in the ferment bucket for 4 days, and will bottle it after another 4 days. Hope it will be excellent. If it is not too much to ask, i am about to make a dark ale, back to here in Australia, we have this dark ale called "Carlton black", i really love it, and from other websites, people say it was very much similar to "Tooheys old". Not sure you have any videos for those kind of black ale? Sorry for asking too much. Best
+redbrickize I haven't brewed many Aussie style dark ales but I think a good place to start is with the coopers dark ale extract. I haven't bottled for a while but 1.5g per stubby sounds not much, although I guess if you are going for a true stout with low carb then it'll be alright!
I've just bottled my 6th 23L brew (which was a Beechworth Pale Ale clone - fingers crossed) and this video has inspired me to do my first Stout. It looks amazing and definitely the best Stout video on UA-cam. I'm wanting to do a smaller batch though i.e. 9 or 10L. Any recommendations as to how I could tweak this recipe with optimum results but for a smaller brew as I'm finding 23 litres is just way too much. G'day mate, Trouble with using a big can with a small batch is it will be way too bitter since its designed for a big batch, coopers do make smaller cans though they dont have a stout, but I guess you could start with a Dark ale base. Hey mate, i am really keen to try this but how do you think it would go with Fergs Oatmeal Stout Fresh Wort Kit from Grain and Grape.
colum kelly G'day, I haven't tried that kit myself but the vanilla extract could be added to anything you like with no dramas, for the cacao if you wanted to add that I wouldn't add powder but would probably go with some cacao nibs or crushed nibs which you can get at most supermarkets these days or health food stores. colum kelly Since you're using a fresh wort kit I'd probably just add them to the fermenter after about 5 days once fermentation slows a bit. You should probably soak them in a little vodka or maybe even bourbon just overnight, then strain them and add them (or just add the whole lot). If you are boiling something to add to the kit yes you could boil them with that. I've heard of people roasting them in the oven too, but be careful not to burn them. Many choices! Cheers!
Gash Slugg hey just another thing Gash ole mate. What is the carbonation like in your brew, I use drops and would normally do two in a 750ml. Is it worthwhile trying a few with less carbonation?
Ahh, I remember buying a dozen of those Coopers kits at a time because the store gave 1 free if you bought 11.

This is probably a stupid question for a stout, but would you recommend this to somebody who isn't the biggest fan of coffee? Not too overpowering?
I dont like coffee in beers, theres no coffee in this, I guess you'd get small coffee type flavours from the dark malt, but not overpowering. Cheers!

+Lewis Hume Yes you can use powdered peanut butter, how much you use is debatable and changes for each different beer. Experimentation is required, I'd probably start off with 100-200g 4-8oz. Or you can always just go full hog and use 500g 1lb.. Depends what you are after! Cheer mate!
+Gash Slugg excellent! one last question. i only have 1 sachet of coopers yeast, the one that came with the stout. will that be able to cope with the coopers stout and the can of dark malt extract? or is that why you added two sachets?

The freshest ingredients you can get, including the can. Good quality yeast and a controlled fermenting chamber. Adding some grain and hops to the recipe also improves it a lot, but probably more than most recipes recommend that you see. You won't notice any twang in this recipe I don't think, dark beers are good for hiding lots of faults. Cheers mate!
