- Nendra Banana Peel Pakoda (Nendra Balehannu Sippe Pakoda) is an authentic Mangalore-style snack made using the peel of the Nendra banana. It is a great way to reduce food waste and make a delicious, crispy snack that is unique to the coastal regions of Karnataka, especially Mangalore. Here is how you can make this traditional recipe.
Ingredients:
Nendra banana peels: Peels of 2 ripe Nendra bananas (outer peel)
Gram flour (Besan): 1 cup
Rice flour: 2 tbsp (for extra crispiness)
Red chili powder: 1 tsp (adjust to taste)
Asafoetida (Hing): A pinch
Green chilies: 2, finely chopped
Onion
Salt: To taste
Water: As required (to make the batter)
Oil: For deep frying
Instructions:
Step 1: Preparing the Banana Peels
Wash the Nendra banana peels thoroughly to remove any dirt or pesticides.
Scrape off the outermost thick layer of the peel with a knife.
Cut the peels into thin strips or bite-sized pieces and set aside.
Step 2: Making the Pakoda Batter
In a mixing bowl, add the gram flour, rice flour, red chili powder, asafoetida, and salt.
Add the chopped Onion and green chilies to the mixture.
Slowly add water, little by little, and mix until you get a thick, smooth batter (not too runny). It should be thick enough to coat the banana peels.
Step 3: Coating and Frying
Heat oil in a deep pan over medium heat.
Dip the banana peel strips into the batter, ensuring they are well-coated.
Gently drop the coated peels into the hot oil.
Fry until golden brown and crispy. Make sure to turn them occasionally for even frying.
Remove the pakoras from the oil and place them on paper towels to drain excess oil.
Step 4: Serving
Serve the Nendra Banana Peel Pakoda hot with coconut chutney or tomato ketchup, along with a cup of chai.
Tips:
Make sure to scrape off the tough outer skin of the banana peel to avoid bitterness.
Adjust the spice levels according to your taste.
Rice flour is added to give extra crispiness to the pakoda, but you can skip it if preferred.
