I love carne asada tacos! Best I Ever Had was back in college when my homies and I would vacation in San Diego Then cross over into Tijuana on the weekends. My friends would go 2 get drunk and I would go to get fat! We got a lot of great food here in Miami but no one can cook proper Mexican for shit . Even Mexican restaurants that are considered good and claim to be authentic fall short. How can you be authentic if you got a kitchen full of ecuadorians and SQUuatemalans?? I do a lazy Cuban's version of it though where I just marinate the skirt steak in Mojo overnight. It's not as good as Kirby's I'm sure but no one has yet to ever push it away. Keep it up Kirby I love the vids bro!🌮
Sounds like some good times, Im 2 hours east of San Diego. I visit Mexicali a couple of times a year. $1 a taco, you can't beat that compared to over here in the states. Plus they give you all kinds of condiments to top your tacos. I feel you on that, I see the further away you get from the Mexican border, the food starts to change when it comes to Mexican food. Carne Asada Tacos...I'll have mine rare please. With onions, salsa...extra hot, a little fresco queso and cilantro. I got excited the other day after watching one your videos...a FEDX truck pulled into my yard. I thought...Kirby finally did it...he sent me some jalapeno poppers...then I woke up, rushed to the door, flung it open with great expectations...then it hit me...I was dreaming. Lol Great recipe. It had 5 lbs of ranch steaks and I was like...ok I'm making carne asada! Being from AZ I have to you it wasn't bad at all. Great video brother. Keep your grind on!

Damnnnnn brotha, that's what I'm talking about... Us here in South Texas we use the Fajita skirt steak for carne asada tacos👍👍 The fajita skirt steak is the #1 cut of meat down here in the RGV, Rio Grande Valley👍👍

Going to use your recipe for my son's b-day on Sunday. I heard you say at least 24 hours soaking in the marinade. In your opinion, how long is best if you have the time?
You can let it marinate for 2-4 hours if you are on a time crunch. Just season the meat with salt directly instead of in the marinade. I like to keep my sodium a little lower, so that is why I let it sit longer. But ya, leave the salt out of the marinade and season the meat with salt. Let the meat absorb the salt for a few minutes, then place it in the marinade.
you can use flap meat also, most restaurants use chuck steak. Not a fan of chuck steak, it has a lot of fat and hard fatty parts. but some parts of it can be nice.
General rule how I would price for catering back in the day. About 1/2 lb per person, so about 7-8 average eaters. I know some will put down like 6 tacos. So it depends on the people.

It's cool if u like rare or medium rare. Not trying to tell you what to to like. Just sharing my experience (and pretty much the experience of anyone who's lived in Mexico and Los Angeles). Lol... The marinade looks bomb tho.
I didnt cook all of them medium rare, just the ones I showed on camera. Hey I know man, my family likes it more cooked. But If I would show it any more cooked, the beef trolls would roast me for it. Just part of UA-cam. That marinade is really good, its been my go to for quite some time.
