Saludo. Nunca he hecho un pan sólo utilizando masa madre, siempre añado una pequeña cantidad de levadura panadera. Tengo mucha curiosidad por esta receta ya que donde vivo las novias son cada vez más difíciles de encontrar. No sé cuántos intentos me tome lograrlo pues creo que mi masa madre no es muy fuerte... bueno a ver qué pasa.

Can you explain why you recommend stiff starter vs. an active “ regular” starter
Yes, a stiff sourdough starter works better for sweet enriched breads, the flavor of the starter is less acidic this way
