It looks like you chose the right times to retreat on some ships. Isn't it weird that Cylons don't retreat regardless of the situation?

They do...in some scripted missions.

how do u retreat

Easiest way is to select the ship, press space bar, then click Retreat at the bottom.
You cannot retreat Galactica or Daidalos.
