I just got one too! It’s wonderful! Suggest putting kitchen towels over the top to keep it warmer during fervent. Put crystallized honey in the microwave a few seconds and it will liquify again.
Honey never goes bad. They have found it in the tombs of ancient Egyptian kings! It will crystallize, but there is no need to ever throw it out. Microwave or float container in hot water and it will liquify.
I wonder if a large inverted styrofoam cooler would fit over the whole thing? The might help insulate it further, and possible provide a smidge of noise mitigation?
I make a lot of bread recipes. I have the 8 qrt KitchenAid, Bosch, Ankarsrum, & the Joydeem. I do like them all KitchenAid isn't for me for making breads Yet the others do good job I like the Joydeem for the easy use and the ferment setting you just showed me how to lower the ferment time Thank you....

Hi, your videos are great. If you can add some keywords like dough maker, bread dough and so on in the title and description of your video, your video plays will go through the roof.
I let it mix long enough that the dough has become strong. You know when it is strong when you can grab a handful of dough and pull it up and it not tear. It should elastic. Then let it ferment long enough to let the dough double. It is good also at the beginning of the mixing process to let it mix for a couple minutes then let it sit for 20-30 minutes. Then let it start back to mixing and kneading. Thanks for watching!
I wouldn’t rely on the mixers instructions to learn the basics of bread making. Lot of UA-cam vids on that. Bread making videos may use other mixers, but you can apply that to this one. Once you learn the techniques the mixer is just the tool.

How do you know how long to mix and ferment? the directions are very slim.
I just received this also. My directions say to put the flour in first. That keeps from it crusting up on the side and having to scrape the bowl.
