Aloha. I'm such a whimp when it comes to spiciness. I can't tolerate much of anything. Haha. But yes adding some chili pepper would be great for people who like heat.

Thanks Relle! Great recipe! For those like me living in a condo without easy access to a smoker or grill, I find that adding a teaspoon or two of liquid smoke to the marinade, and then just putting it in the oven directly on the rack (with a foil-lined pan below to catch drippings) at 200 degrees does the trick. Won't get that pink color and of course real smoked is always best but it's still really good.
Hey Relle, the smoke meat came out unbelievable. Just letting you know that it was just as good as all and even better than some I have bought in the last 30 years around Hilo. And I am in construction all these years and lived in the ranch country so know allot of locals who have made it. No measuring like you said and I did use dark brown sugar and white sugar. I also threw in some Hawaiian chili peppers whole this second round so we shall see how that makes it. Just watching your video really opened my eyes to how easy it was. I wish I had seen this video years ago! But now that I have I have watched others and am going to build my own smoker out in the yard even though the Traeger and the Weber work great. Thanks again! I feel like such a dummy. I have a smoker but I never thought of making smoke meat on it. I just wait for my friends with one smoke house and do a batch when they do theirs. Mahalo for the idea. I'm laughing at myself right now haha. But loving da channel.
Sometimes I like the pork shoulder cut more when i feel like i want to eat healthy :D. LOL @ "healthy" , they both come from the shoulder area just higher fat/marbling, seems like a lot of people who make smoke meat use the shoulder because lately it usually has less fat. great recipe but i'm allergic to guava so i usually use lilikoi or the staple shoyu sugar(or mirin) mix. my friend makes a char sui/spicy smoke meat that is the bomb but he moved to Texas. It was a bad choice to watch this video at 1 am, now i have the munchies and got to go downstairs and at least make a bowl of cereal or something :D
Nice job Relle, from Paul over here in Hilo. My son loves smoke meat. So now that I have a Treager that I got from HPM I can use your recipe and we will all have smoke meat tomorrow in Kaumana!!! Aloha
