My Rajasthani friend just does it only with water, super soft chapati, kneading does magic,you can add ghee to make soft chapatis

But when you add milk, it should be consumed within 6 hours...I have another suggestion, I keep water in a bowl, I just dip my hand in water and do the dough, repeatedly...then the dough can be made perfect...this I learnt from old Hindi movie...yes my mom do chapati like North Indians without lifting hands...I too trained....my chapatis are very very soft...you are training youngsters nicely
