How to make the best NIGERIAN BEEF STEW | African Beef Stew

- Let me show you how to make this easy Nigerian beef stew in easy steps.
Fried beef stew is one of Nigeria’s classic dishes, one of the tomato stew recipes that must be in every Nigerian household. Beef stew is made with tomatoes, red bell pepper, scotch bonnet (ata-rodo), onions and of course beef.
Ingredients
2 red bell peppers
400 g canned chopped tomatoes
1 medium onion
3 scotch Bonnet
3 tsp chicken bouillon powder use according to preference
1 tsp salt
1 tsp oregano optional to boil the beef
1 kg beef
1 cup veg oil or as needed
½ tsp curry optional
½ tsp thyme optional
1 teaspoon dried parsley

Very important to boil the meat with seasoning, then fry it! 😋
Looks delicious. You could have also let us know the proportion of the tomatoes and pepper before blending too, that would have really helped those who don't know the first thing about cooking.

I just tried this tonight and it was so delicious! I had to modify it and use mild peppers for my toddler and even myself because scotch bonnet is a lot spicier than the jalapeños and hot sauces I’m used to. The flavors were incredible and it looked just like the video. I don’t know if it was the proper way to eat it but we tried it with plantain fufu and my whole family loved it. I will be using more of your recipes in the future!

This looks yummy but you should have added some of the beef stock for greater taste.

Love this. Made it and was delicious! Question, what do you do with the remaining stock from boiling the beef? Do you just discard it?
You can use it to thin out the stew if it gets too thick, also adds some flavour.

I normally store it in the freezer, it can be used for soups, other stews, and future stews.
