    My mom always soaks black beans at least 24 hours.
    She drains the beans and cooks them with fresh water. She said that this will help digest them better. They have done that for generations.

    I am so blessed with my knowledge it was passed to me from my grandparents. I know so much about fruit and vegetable fermentation medicinal plants and mushrooms . All they talked in this video I knew from my grandmothers , She was science without knowing :) for sure. Never had any medication in the house but she had a cure for any disease with food. She had a long healthy life.

      did she also tell you that Lectins can be reduced in foods by cooking them? (see artcle from Eating Well, "What are lectins and is eliminating them healthy")

    Thank you Doctor William for sharing your clinical knowledge. I am a Nurse in Australia and recently had my liver transplant. I have subscribed so I can get more diet information to help with my immune system and over all health . May the Lord Almighty continue to empower you with more knowledge to share to people.

    Hi Dr LI, I am Portuguese and love my Mediterranean food :) In Portugal we eat some greens that we call "grelos de nabo" that are bitter and very green. We do have "local" greens that I can not find in other countries:
    Beldroegas
    Nabicas
    Grelos de couve
    Grelos de nabo
    I hope I did peak your interest on the Portuguese greens.
    BTW the olive oil from Portugal is excellent! And fresh sardines (from June until end August- fat and Omega rich ) are to die for.

      My Dad is Portuguese and has eaten olive oil for ever and eats a Mediterranean diet. He is 85 and has been able to overcome serious health issues that other people at younger ages couldn’t.
      He doesn’t have any wrinkles either.
      I love food from Portugal 🇵🇹
      It is delicious!

    As an olive grower down here in the SW of Western Australia, I may be a bit biased as to the value of extra virgin olive oil on our health and wellbeing. ;-) I may need to steal Dr. G's phrase 'the only purpose of food is to get olive oil into your mouth.' LOVED IT!

    Great post, apart from the blatant advertising for Dr Gundry's olive oil towards the end. In fact there are far cheaper olive oils easily accessible on the UK (where I live) market, with a higher phenolic content. Olive Oil Times commissioned two analyses of Dr Gundry's olive oil that revealed total phenolic content between 561 and 612 mg/kg; this is high; but, for example, Amazon UK are selling olive oil at 644 mg/kg at a cheaper price with free delivery. Of course this might not be true for other countries.
    But nonetheless, thanks for posting William, much appreciated.

    I have been listening to both of these gentlemen. What's funny is Dr. Gundry's says dont eat this and don't eat that. It's not healthy for you. And Dr Li says eat it. One example is tomatoes. Since I have listened to Dr Li thou I have lost 20 lbs and fell a lot better physically.

    I can’t believe Dr Gundy didn’t know you have to soak dried beans. Here in the UK it’s printed on all packets of dried beans.

      He knew you have to soak beans, what he said he wasn't aware of was that soaking beans was starting the fermentation process

      if u follow him on other sessions.. my understanding is that he emphasizes that lectins are hard to destroy and soaking does somewhat, but not completely and it is advisable to pressure cook , just to be sure. 🤔

    I had hoped that Dr Li would discuss tomatoes, eggplant & black beans which Gundry has condemned & Dr Li has promoted. Dr Li missed an opportunity to discuss his position as opposed to Gundry’s. This was not what I hoped for.

    I have been waiting to see if these two would talk to us together! Two great minds but something’s world apart regarding beans, tomatoes etc.

      Just ferment the beans and ensure the tomatoes are cooked. Then youll get the lectin out of the picture.

    I was really surprised to hear Dr Gundry talk about beans in a positive way. I thought his position was that beans are bad for you because of lectins. I listened again to make sure I heard correctly. So is he saying beans are ok if they are soaked (thus starting the fermentation process) for at least 24 hours? Please clarify. I do not follow Dr Gundry because of his position on beans. They are a mainstay in our home. But I wanted to be open minded and listen.

      I am the same, I couldn’t understand why he didn’t like beans, so thought he was a crank.I can’t believe he doesn’t know to soak dried beans!

      He has always said beans should be pressure cooked. I've followed him for 8 or9 yrs now. He hasn't changed his position on that but soaking them for 24 /48 hours perhaps is okay.

    I personally was not impressed with dr hi dry!! I would much rather hear dr li !!! He is so knowledgeable about the human body and the connection good. Dr William Li is the BEST and I’ve studied nutrition my whole life!! LOVE the new book. Most sincerely Harriet Berk Costa Rica

    How would you check olive oil for polyphenols? My brother grows olives and has his own press here in South Georgia, USA. I would love to know what the level of polyphenols are in his oil. It is so good. He has lived in Italy and learned so much from them. He also visits California for help with his growing and pressing. He won an award in New York when he first started producing the oil.

    Interesting discussion. I was a little disappointed when Dr Li talked about the great salad he enjoyed with tomatoes and cucumbers and Dr Gundy didn't say anything about the fact that he does not think people should eat those vegetables. One comes away from the discussion a little confused.

      absolutely. I think these health gurus are just finding their own niches in the market that nobody else has capitalized upon to push product. I started buying and eating tomatoes again, making sauce without olive oil, and Dr. Li said alcohol is bad. I use wine in cooking. A lot. Next someone is going to come up with dealcoholized high polyphenol wine for $50 for 8 oz. LOL

      ​@@wmbinnj2763Doesn't the alcohol evaporate when used in cooking? You are right about Gundry getting carried away with the tomato thing. I never paid attention to that. You have to watch a lot of videos and read a lot of books to decipher for yourself what you believe is true.

    Two scientists in the kitchen making food, "toss me the sodium (table salt)"..."toss me polyphenol (olive oil)"... at the end "let's cheer with polyphenol (olive oil)". Thank you sirs for the tips.

    I like yellow tomatoes. Ate one for first time last month. They taste like cucumbers! they are yummy. thanks so much. trading in red for yellows in my salads. I love Organic beef tomatoes myself. Eating store chemical-induced tomatoes are terribly deprived of nutrition. They even taste like plastic! I have to say, I was not a fan of Doc Gundry. Glad so much is now cleared up! He turned me away from these short ads cause I thought they were misleading. One was about tomatoes. The other thing was beans. Beans are part of the blue zone. Beans are the cornerstone of every Blue Zones diet in the world; lentils, garbanzo, black and white beans in the Mediterranean; and soybeans in Okinawa. The long-lived populations of the world. Anyway, It is good to know that is cleared up and he is also on the same and similar page. Anyway, was a very good video, info, and appreciate you both taking the time out to share interview info with us all.

    wow. this was confusing. I started watching dr. Gundry and am weaning off nightshades. Now Dr. Li had a short about villifying nightshades. Ok so Joel Wallach says no oil of any kind due to rancidity and aging being no good for the vascular system. These two tout olive oil (which I rarely use -- only ghee and butter). I think I'm just going to do me. I can't stand cooking with EVOO. The smell and burn is offputting.

    Thank you both Doctors.... your conversation regarding olive oil is so beneficial to our health! My mother was born is Italy and she was a superb cook! I grew-up-up nourished with a Med- diet and today, I am a senior and I am pretty healthy - my skin is flawless and my hair is lustrous I still walk a mile every day! I continued in my mother's footsteps... no alcohol - no smoking... no drugs....and a Mediterranean diet! Bingo!

    The meeting between you produced an interesting conversation. I'm from Israel. The Mediterranean menu is very popular with us in the oriental restaurants and also in my family. Use of olive oil in all cooking and salads and a lot of vegetables in the daily menu. I loved your admiration for the addition of parsley and lots of "green herbs" in the salad. You are great.

    I’ve loved onions and garlic all my life, probably starting with green onions in the garden when I was growing up. But, the times that I’ve bought red onions for a recipe or salad, I found them very hot. I much prefer sweet onions like Vadalias. I eat them raw and even nibble on them when cooking or I sometimes make an onion and tomato salad. Am I missing something here nutrition wise?

    Yea Gundry says the lectins in tomatoes are bad for you. He says to peel the tomatoes and remove the seeds before eating them. Li, says there is nothing toxic in tomatoes, period.
    You too should really talk about tomatoes instead of olive oil. The things you disagree on and not the things you agree on. 🙂

    Surprised to hear Dr. Gundry say “I don’t know.” when Dr. Li asked what variety of olives are in the olive oil he sells. Never heard Dr Gundry say “I don’t know” before.

    I've only started watching Dr Li's channel but when it comes to what we should eat or how, I am going to stick with what I've learned from Dr Gundry.

      You’ll find out that Dr. Gundry is anti tomatoes and Dr. Li is big on to tomatoes and tomato sauce. I followed Dr. Gundry for a long time until I ran into Dr. Li. They agree on olive oils which Dr. Gundry sells but Dr. Li does not believe lectins are harmful. Me either. I eat what grows on the ground, lectins or no lectins. My two cents worth. Decide for yourself.

      ​@@exchng4n I have decided for me, it's Dr Gundry. No one will die because they did not eat tomatoes, on the other hand, perhaps your health won' t be as good because of tomatoes. It's very important to be informed and we all have choices. Thanks for your comments.

      Dr Grudry says tomatoes are just fine to eat after you remove the skins and seeds that contain the anti-nutrient lectins.

      @@markrobertdevison1227 maybe they won't die, unless they have advanced GERD, then tomatoes will be too acidic and will cause digestive juice to erupt out of their throat burning everything in the process

    Dear Dr. Gundry and Dr. Li, I was expecting more from this duo. I was eagerly waiting to hear your interesting perspectives on lectins, nightshades, etc. It was a nice friendly get together for you, but a disappointment for me.

    People we are all different have different sensitivity issues not everyone gets cancer not everyone is affected by poison ivy.Roll with it.Try different things and find what works for you doesn't mean that one is right or wrong the lectins caused me huge problems but my daughter has no issues

    Interesting stories about the olive oil but it would have been more interesting to talk about your differences; mainly Dr. Gundry views on New world vegetables. After all, those vegetables are prominent in Mediterranean cuisines. So what does dr. Grundig eat when he goes to a Mediterranean country? Disappointing conversation that avoided the sticky points !

    I can't believe anyone would eat any vegetable without washing it. How gross! Many vegetables have been contaminated with ecoli in the past. The only thing I don't wash is spinach that says on the package it has been washed 3 times. I probably should wash those as well though.

      @@rccantrell4436 Dr. Li, I’m afraid, is trying to break into the world of celebrity doctor/nutrition guru. The guys like Dr. Hyman, et Al. are far more concerned with their bankable image than anything else. One celebrity guru talking to another celebrity guru hits all the internet algorithm magic boosting the clicks of both gurus into the stratosphere. There are much better sources of nutrition and wellness info than Quack Gundry, you just have to look for them.

      @@Nicksonian Dr Li's program has really helped me a lot though. I'm eating a lot more fruit & veg than I used to and I even have the energy to clean the house on a hot day. His suggestion of adding good things instead of restricting makes perfect sense for a long term weight regainer like me.

      Berg is a bigger joke than Gundry. At least Gundry is a real doctor. Berg is a Scientologist chiropractor who spreads a lot of very dangerous advice about high fat diets and other health advice he is totally unqualified to give.

    Isn’t olive oil processed food? Confused !

      You can get olive oil where the olives are grown, harvested and pressed on the same estate. What is important is the Harvest date rather than the expiration date. Most of the olive oils on the shelf are "processed." There are web pages that show "imposters." You will be very surprised.

      @@hooshikstephen9117 I began to listen to McDougall but I think the vegetable oil industry has sponsored too many of the findings that sway results to their monetary gain. I have been getting healthier since dropping all the fruits and sugars and high glycemic starchy vegetables from my diet. I tweak my diet as I learn new things.

      @@Lorrieonline Isn’t olive oil still processed (regardless of the harvest/press date) since it is concentrated and not in it’s original state. Why not just eat the olives? That way you get the fiber as well.

    Anyone, at anytime can have a serious allergic reaction to a food that is "good for you". Lesson learned: first time, just take a small tspn. of the new "good for you food".

      To me....he is always selling something....the various powders....polyphenol remedies....get rid of dark patches on your aging skin treatments do not work.....I do not like his commercials (on youtube) & his know it all attitude....I do like Dr. Li however.

      Same, He didn't sell me on a Paleo trend demonizing tomatoes, peppers, beans and legumes years ago. Calling them "poisonous plants", but family members listened to him. Now he has a eureka idea that soaking beans break down lectin and he eats " Mediterranean"calls himself a "vegaqurium" instead of pescitarian.. Does he realize that the Mediterranean diet is full of the "poisonous plants", like tomatoes, peppers, nuts, beans and legumes? He claims peanuts are poisonous to men causing an enlarged prostate. Maybe his theory on that will change too so that he can get peanut eaters to buy his olive oil.

    Dr Li, I bought both your books because you made sense to me about foods, but seeing this video, I've lost confidence in you. I don't care if Dr. Gundry is a famous heart surgeon. He's become what I would call a snake oil salesman. All this talk of stressed-out olives is just a gimmick to sell his "special" olive oil. Give me a break. I wish now I hadn't bought your books if you're endorsing this guy.

    Okay, so now he's backpeddling on the beans. During all his research on how bad beans are bad for you, he never knew you actually have to prepare them properly before you eat them? Everyone that eats beans knows that, yet he missed it before he maligned beans and caused thousands of people to stop eating beans when our world desperately needs all the bean eaters it can get. And the long soaking process doesn't ferment them. They are alive and begin to sprout and that removes the lectins. None of which is needed to make beans safe and healthy. They simply need to be rehydrated and cooked completely and then they are safe and healthy. I personally do soak my beans, but they can be rehydrated during the cooking process.

      Dr G has said before that your microbiome will process the olive oil for you. I am up to about a half liter a week and so far losing weight. You have to start off low and build up or else you won't like what happens. I have just started so too early to know if I will continue losing weight.

    It's a very interesting conversation, BUT... a thought: in the same conversation you ponder on why meals in modern societies (eg. US) have moved away from simple healthy traditional Mediterranean meals passed from generation through generation, but then you present a product ("promote") that strays away from the original simple extra virgen olive oil. Do you see what the conflict is here? What if the olive oil is good as is, without "extra" anything? The constant search for more efficient ways with foods (better yield, better hybrids, higher concentrations of this or that, improved taste or textures, and many other examples of manipulation in the chain from the ground to the plate ) is exactly the problem.

    Nice talk, but you know, us folks with less money can't fly to the south of France or Italy to eat local foods. And some of us don't shop in Whole Foods every day, so how about telling us what you can find in a local Wal-Mart. Also, you Doctor's don't agree on your recommendations, like Gundry and his lectin fetish, especially tomatoes, which you say are good. The one thing about Gundry I don't like is he's a pill pusher, ready to sell you a pill that only he can provide, containing just the right exotic ingredients in the right amount for $49.95 a bottle. That's all his infomercials are about. I swear, every pill he wants to sell is the "one thing" that has led to his weight loss and health. OK, Doctor Gundry, just pick one already! I think you, Dr Li, lose credibility associating yourself with him. If you ask me, Gundry doesn't look very good for a 70 year old person, and I'm 73.

    Dr. Li, I remember watching one of your video speeches awhile back and you mentioned the Top 3 most potent antiangiogenic olives for EVOO:
    1. Moraiolo (Italian)
    2. Koroneiki (Greek)
    3. Picual (Spanish)
    It's been the only types of olive oil I buy. They're delicious on my salads. Thank you!
