I ended up going with carbon Sensah Team Pro 11 speed shifters which are Shimano compatible. I feel I get the best of both worlds with lightweight carbon shifters + Shimano derailleur compatibility. I feel one advantage I get with the Sensah shifters is that they shift smoother in the lower gears.
I've been using the 1st edition of 11 speed groupset since it was launched. .. I don't find the lever-throw a problem during rides.. .. Also Seldom need to shift few gears at a time.I love the single Lever shifting. Take note sensah has the hydraulic disk brake version which I've heard more comfort
Another youtuber also mentioned that Sensah Empire's rear derailleur adjustment is finicky. I might try my luck with Sensah Team Pro + Ltwoo R9 Derailleurs instead

Yeah our first initial few rides the FD just wouldn't shift from small to big which we then finally found out the trick to resolve it 😀
Changed the FD out for a sram force, zero problems
