    Tamarind rice also popularly known as Pulihora or Puliyodhara or Chitrannam is a common rice preparation in South Indian cuisine The tamarind rice or pulihora tastes sour, spicy hot and salty all at the same time.
    Tamarind Rice

    Ingredients
    4 cup boiled rice for 5
    1 tbsp channadal
    1/4 tsp chilli pdr
    2 number chopped gr chilli
    1 tsp coriander pdr
    1 tsp cumin pdr
    1 springs curryleaves
    1 pinch fenu greekseeds
    1 pinch hing
    1/2 tsp mustardseeds
    1 tbsp oil
    2 tbsp raw peanuts
    3 piece red chilli whole
    1 tbsp sesame seed pdr (optional)
    1 cup Tamrind juice
    1/4 tsp turmeric
    cooked rice
    • DIRECTIONS:- Heat the oil in the pan and add the whole red chillies.let the chillies to fry for few seconds
    • then add the mustard seeds.once the chillie are fried they are no longer hot but get milder taste.
    • When the mustard seeds splutters add the fenugreek seeds.now add the chana dal and peanuts and cook them properly
    • on medium flame without burning them.then add the curry leaves,chopped green chillies and hing.
    • Then add the turmeric,as haldi gives the color to the rice add enough turmeric.
    • Then add the tamarind juice to it and add the dry masalas red chilli pwdr,coriander pwdr and cumin pwdr.
    • Let the gravy cook till the oil oozees out for 10 to 12mins.while the gravy is cooking in absorbing the juices
    • toast the seasame seeds and crush them and once the gravy is ready add the pwdr to it and cook it for another 15mins.
    • check the seasonings and add salt .
    • Then take your cooked rice and add the tamarind gravy to it mix it and enjoy.
    you can make this gravy ahead of time and store it in the refrigerator and mix it cooked rice whenever you want

    This is a great recipe. I have never tasted tamarind rice before.. so I didn't really know what I am aiming for.. yet I was extremely pleased with the tangy, spicy and sweet rice that took just about 20 mins to make. I cooked the white rice in the pressure cooker. 3 hisses.. so quick. The sauce was super. No peanuts so I used broken cashews.

    Hello chef,
    You can add 2 or more tablespoons jaggery to the gravy and you will never want to stop eating tamarind rice.I love all your simple yet wonderful recipes.Thankyou.

    Your process of making Tamrind rice reminds me of my Grand mother. Happy Diwali. Pl make a video on courses of meal in South Indian style of eating with ceremony starting with Rice, sweet pulses(Dal) and curry and end it with curd rice or butter milk rice and at night with milk rice. How mango pickle adds to the last course and jaggery at night with milk rice at night.

    Here in Mexico we make tamarind water to drink, and tamarind is a popular flavor for beverages like soda and bottled juice, do you have anything similar in India, or do you only use tamarind as a spice? I love to see how people in other places sometimes give us new ways to use different foods in new ways we did not know about, thank you Vahchef.

    Sanjay, you forgot to add, that the oil to be used should be either gingelly oil, or better still ground nut oil, which enhance the flavours much more. This puliyodharai is an important item in almost all Hindu festivals, and is also served in Vaishnavaite temples, as prasad.

    To all viewers,
    Can you tell how much he actually put in? Make it to your taste and stop being such a critic. He is a restaurant chef and quite frankly if your going to make food might as well have it be tasty. Salt and oil do not mean you will die young. You have to limit even your rice intake people. Eat less but eat the best. I am a registered dietician and if you eat 80% "good food" then you will be fine. No one likes a critic. This recipe turned out amazing! Thanks

    His cooking usually involves a lot of heat via chillies (typical of south Indian, esp. Andhra cooking), which is balanced by the salt he adds. So, it's a fair trade. However, you can make it anyway you want it to your taste.

      This paste can be stored for almost 3 to 4 weeks in the fridge, and nowadays is also commercially available in ready made packets in al super bazaars
