I've recreated the original recipe by chef Heston Blumenthal from his series 'In search of perfection' which aired on BBC One in 2006 (The best cooking series I've ever seen, and one that really got me into cooking). It's not your average recipe, using prime turbot, a siphon gun for the batter and 3 stages in cooking the chips, but it's as good as it gets for this widely recognised dish.
