      We would fry off the meat, add tomato paste, fry that off, deglaze with the red wine, we would also use chicken stock and canned marzano tomato and cook it until it's no different to passata. Source; I work in a michelin restaurant. We'd never serve it in a menu but that's how we make it for staff.

    I let it cook for 6 hours, it was just amazing. It's really important to let the flavors develop and combine. Also, Vincenzo, I would love to see some recipes with truffles on your channel! I heard that truffles are perfect with pasta :)

      ​@@yahudaiskhanuti265 No because the water is constantly evaporating you have to keep replacing it otherwise it can burn, only the water evaporates, all the 'flavour' remains in the pot and enhances it as the flavours develop more over longer cooking.

    I don't mean to offend Italians truly I love your food and passion. Which is why I am subscribed to you Vincenzo. I have a confession to make and maybe it's the quality of the pork/veal I can acquire. It makes very nice Bolognese but I prefer another version that I make. Replacing the pork and veal with lamb. The flavour for me maybe just my personal preference as I am a lamb eater but I like it more. I don't have easy access to veal and I tend to not eat much pig. So lamb being young and fatty seemed to me to be a good substitute for my own tastes. Infact if you are someone who doesn't eat pork, try instead with atleast 20% lamb mince along with beef and/or veal. However if you can eat it the traditional way to try it how it suppose to be made and make sure you clarify that it's not an authentic Bolognese. Many apologies to any Italians horrified by my message. xD

      I make it with lamb most of the time, sometimes pork and even chicken. Lamb turns out the best though.

    I like to make this recipe with my slow cooker. I prepare the meat and the suffritto with the wine in a pan, after that I add the suffritto and meat with the peeled tomatoes, passata and tomato paste in the slow cooker and let it cook over night. What makes it a bit simpler is that you dont need to add extra water cause most of it stays inside of the slowcooker. When I want to eat ragù bolognese, but I dont have much time cause of work it is an easy way to prepare it.

    Id like add one can of peeled tomatoes at the end. Than cook that next fifteen minutes... Taste like fresh tomatoes - rustical. Its of course kind of, variation. And yes... I can eat that every day + pappardelle or tagliatelle pasta. Absolutely my one of fave dish. Thank you Guys for that recipe 🙂👍🏻

      @@vincenzosplate For me its awesome taste. Im cooking slowly about two - three hours, adding a bit of water. But the tomatoes in this sous change the taste, so I tried to add peeled tomatoes, smashed with hands or fork and after that next fifteen minutes. And ready to eat 🙂I like bits of tomatoes in the ragu. Looks nice and tastes more freshly. Now Im big fan of bolognese 😋 So thank you Guys and really appreciate your answer 🙂 Im not going to adv products, but Im using tomatoes from red cans M and my pasta is DC. You said this is good quality pasta. It is 🙂👍🏻

    I use Marcella Hazan’s recipe: milk before wine, to protect the sweetness of the meat from the acidity of the wine, also white wine which is more delicate than red

    I've always been told that traditional bolognese hardly contains any tomatoes. Is that just a myth or is this bolognese not a traditional version? I've also seen it being made with white wine? Still looks fantastic

      So from my research the people from Bologna maybe add 1-2 tablespoons of tomato paste per kg of meat just like you said. But others put more. I would suggest to not put more tomato than half of the meat or it will taste like a tomato sauce, not like a meat sauce. Way more important is that they did not use Pancetta. Tastes like nothing without it in my opinion.

      A friend of mine from Bologna would use tomatoes very sparingly and was absolutely horrified when I asked if milk was added (although I have looked into it and know that milk is a bit of a divisive issue there)

      Last time I made bolognese I had very deep browning on the meat. It tasted good, but after a couple bites the richness became overpowering. Kinda like eating too much wagyu.

      You can just skip it!

      If you're worried about the alcohol part, if you just cook it for long enough before adding tomato, it should just leave the flavor, and no alcohol. However, if you just dont like the taste, then skip it. Maybe even consider adding a chicken stock, its traditionally used in many dishes like this one.

    I don't understand why you'd cook something for so long in order to concentrate flavour by cooking off water, only to add more water. Pointless. You might as well just reduce the cooking time and not add any water.

      It's breaking down the ingredients, which crashes chamges the flavor. Try cooking it in a shorter amount of time. It tastes significantly different.
