There is a third type of chipotle: Capones. It means "Capons" in Spanish, which are birds that have been castrated. Chipotle Capones are red jalapenos that have had their seeds removed before smoking into a Morita-like yet milder finished product. They are rather rare, and if you want some your best bet in America is to make them yourself. Try Mesquite wood for smoking.

I do still can a few jalapeños from my crop. They're a great condiment for so many things. The rest I wait to become red ripe and smoke/dry them into chipotle.
If i only had to pick one pepper to consume for the rest of my life it would be Chipotle.. Huge fan of spicy peppers and have tried just about everything out there from Jalapenos to Carolina Reapers... there is just nothing more delicious than a can of Chipotle in adobo sauce..
Blah blah, good I guess for those not in the know. Personally, I grow my jalapeños hydroponically indoors, using varieties that promise to be the hottest. I start from seed and grow until red ripe...at least 4 months before harvest. Then smoke them at around 170°F for several hours and finish dry them in a food dehydrator until still barely flexible (not crispy dry). And store on the shelf in air tight containers. Stable for years or until it's time for a new batch. I wouldn't think of grinding them into a powder, you shorten the shelf life and lose too much of the "essence". Instead just take 15 minutes soaking in hot water to rehydrate before dicing up as needed. Also I use them to make chipotle in Adobo sauce and freeze 2 ounce portions for later use.
the simple fact that its not a processed junk food already make it in my superfood list superfood mean there is health benefit and pepper have some health benefit also food is medicine (when you know about nutrition) WFPB for the win
