It's been 3 days that I made a batch of cabbage, carrot and jalepeño. Yesturday it spilled over my counter. Today it formed bubbles on top. How do I know if the bubbles is botulism? Love your content
Botulism is one of those things that is practically impossible to know. They say it has no taste or smell. I like to keep mine covered lightly with a lid, and I do mean lightly so it doesn't explode. I really like using a coffee filter or cheese cloth held on with a rubber band so it can breathe, the problem is of the top is open allowing any bacteria or other things to get in it. Make sure you are burping it every day. I like to keep mine in some sort of container under the jar to help if they spill over. Mold, especially black colored mold, I just toss the whole batch. Many will tell you to just skim it off. I guess I really just want to love because I'm not willing to just skim it off!

After you said that about iodine, you say garlic is ok ... Isn't garlic gonna do the same thing as iodine ? Very nice and complete video otherwise.
So far I have not had any problem with garlic.

I've used iodized salt before and it fermented ok. It was all I had.
Maybe I was lucky, I don't know.
