  • Sweet Marias have an excellent article on Mocha Java. There is a common misconception that Mocha Java MUST BE a mix of coffee from Yemen and coffee from Java (part of Indonesia). The article on Sweet Marias points out that the mixing of coffees from these regions started about 500 years ago, and we don't know exactly what was being mixed, or even if the same things were being mixed each time. Today it's more usual to mix Ethiopian with Indonesian, be it from Java or Sumatra. My theory is that one should roast the beans separately so you can enhance the individual qualities of the beans. Roasting different beans together is crude, blunt, and a bit lazy in my opinion.
This video is a live demo of HALF of the roasting... just the Java part of the roast. I decided on a medium roast to emphasize the fullness, mouthiness of the Indonesian bean, and when I roasted the Ethiopian, I stuck to my usual City+ (medium - light) roast to keep the sweet fruitiness of the Ethiopian beans. Hopefully the results will be delicious!
