Hi! Yes, they do naturally ferment. The aging happens as you keep it for longer.

Can it be done without sugar or a substitute for sugar ??
No because sugar gives the drink it’s quantity, sweetness and also acts as a preservative.
Yes , use honey but it will create a deposit at the bottom of the bottle just shake it before drink it
instead of white sugar, can I use palm sugar?
Palm sugar will alter the taste of the drink, may even overpower it. If you are ok with that, then go ahead
