With the "unable to check for updates", all I had to do was go to the dashboard and come back to the same page. Didn't have to change any DNS settings. The update takes forever on downloading "pfSense-base-24.03.pkg". So much that I am doing a CLI based update in a tmux session so I don't have to keep any browser or SSH window open. I hope it completes!
Unless you actually need zfs, I wouldn't bother as you can manage snapshots etc via vmware. Zfs works best when it has full control of the disks. Probably little benefit in a vm

I've definitely had issues with the config of my dns servers blocking updates.
