    My Granny would make her own vanilla, she would put the vanilla beans in a jar with some of her moonshine, close it up and let it sit for a couple months. Best vanilla there ever was.

    Met all of you back in 2016 or 17 at the house.
    We’re from WESTERN Canada. My sister, She wanted to visit a close friend in Ottawa & I tagged along. … under 1 condition we go see Hercules Candy lol.
    Candy & ideas are simply so on point.
    Watching you & your family over the years expand the business has been a joy.
    I hope one day to return to your beautiful home town Syracuse & have another Hercules Candy experience… your UA-cam channel believe it or not is better content than anything put on television today…
    So many reality shows that PRETEND the content is real for entertainment not realizing many people just want to relate to real people & see their struggles & successes.. getting a small view of a family with zero bad language, yet comical, serous content is GOLDEN!!! It’s something that is missing from many lives..

    Oh wow, that's the perfect family business. It's so heart warming to see the genuine warmth between all the family. Also the love and respect of their parents and their enthusiasm of the artisan process by the younger members is truly admirable. This is exactly why we should support independent small business.     Cooper makes it look like he's been making candy for 20 years! Great job and very entertaining. Personally I put all my cremes in the refrigerator. To me the freezer makes them a bit hard to chew.

    Invertase is used for the inversion of sucrose into fructose .. It changes the composition of the sugars over time. ( that's why they get creamier as they age because the enzymes are converting all of the sugars in the creams) Fructose is preferred over sucrose especially in the preparation of jams and candies, because it is sweeter and does not crystalize as easily. .... henceforth smooth, soft creams !

      So why not replace the sucrose by fructose from the beginning, so that it's creamier in the beginning and stay like that
      Instead of using enzymes to convert sucrose in fructose and glucose

      Not really. Invertase is an enzyme that breakdown the sucrose molecule into fructose and glucose (sucrose is made with those two linked together), then, making into inverted sugar. That's why the texture is creamier/silky and doesn't recrystallize over time.

    Watching Steve take the crosses out of the trays it came to me that maybe have a cake makers spray gun for food colouring that just blows air might make things quicker and might get more corn starch of the crosses etc.

    Have you thought of using tweezers or a small set of pliers (Jewellers pliers) to pick up and place the flowers...It might be a bit easier than using your fingers....

    I'm glad to hear the chocolates keep for a while. I placed an order two years ago just before the borders closed and it is still sitting in a warehouse across the line in the US. Hopefully I'll get to pick it up soon, I'm curious what kind of condition it will be in!
