Cooper makes it look like he's been making candy for 20 years! Great job and very entertaining. Personally I put all my cremes in the refrigerator. To me the freezer makes them a bit hard to chew.

Invertase is used for the inversion of sucrose into fructose .. It changes the composition of the sugars over time. ( that's why they get creamier as they age because the enzymes are converting all of the sugars in the creams) Fructose is preferred over sucrose especially in the preparation of jams and candies, because it is sweeter and does not crystalize as easily. .... henceforth smooth, soft creams !
So why not replace the sucrose by fructose from the beginning, so that it's creamier in the beginning and stay like that Instead of using enzymes to convert sucrose in fructose and glucose
Not really. Invertase is an enzyme that breakdown the sucrose molecule into fructose and glucose (sucrose is made with those two linked together), then, making into inverted sugar. That's why the texture is creamier/silky and doesn't recrystallize over time.

Watching Steve take the crosses out of the trays it came to me that maybe have a cake makers spray gun for food colouring that just blows air might make things quicker and might get more corn starch of the crosses etc.

Have you thought of using tweezers or a small set of pliers (Jewellers pliers) to pick up and place the flowers...It might be a bit easier than using your fingers....

The obvious fact that non of the taste testers say anything right away. They are too busy enjoying the candy then to comment on the candy.
