  • Over the next couple of weeks we're going to do a few homemade sausage recipes. To take the mission out of stuffing the sausage casings, I ordered an upright sausage stuffer, and after putting about 200 pounds of sausage through this, here are my thoughts on the machine.

    Ok I made first batch of sausage; The gear was slipping and I had to control the rod position so it stayed close to the gear. I fixed it. Opening in the casting holding the rod was oversized that's why the rod could move away from the gear. I cut 1" steel pipe longitudinally about 2/3 of the circumference so the outer surface of the semilunar shape filled the large opening in the casting. I hope that next batch will be easier to run. I got this stuffer from EBay for $102 delivered

      Hi --- there are a few things to bare in mind... if it is difficult to crank the filler, you need to add liquid to the mix. The mixture cannot be too solid otherwise you may damage the mechanism. Once you have run a few batches, you will get a feeling for how "wet" the filling should be. Also, the narrower the filling tube you use, the wetter the filling will have to be in order to move through the narrower tube. When adding liquid (water or stock) make sure it is very cold. This will prevent fat smearing, which will lead to a poor texture in your sausage.

      The insert behind the rod help enormously, there is no play at all of the rod in the guide, and yes I only added 1 glass of water to 11lbs of meat mixture and used the smallest tube because of sausage stuffing I had on hand. Will try again soon

      +Beaute' Naturelle Hi --- this is a generic model that is rebranded by dozens of suppliers including Weston, Sportsman and Hakka. They come in all stainless steel, and also a model where the frame is mild steel (epoxy coated) with stainless working parts. You can look at a huge range of options here --- whats4chow.com/products/

      +Beaute' Naturelle Hi --- if you are looking for one, here are a few pointers to consider... 1) The vertical stuffer does leave you with a bit of extra filling in the outlet pipe -- about 300g, which I normally just use to press burger patties ---- the horizontal stuffer will leave considerably less leftover, probably about 50g. 2) The vertical stuffer takes up less than a third of the work space when compared to the horizontal stuffer --- this was my deciding factor as space is always premium in my kitchen.

      Whats4Chow Thank you very much this is most helpful information which I did not consider beforehand. It appears for ease of cleaning the vertical is a winner, is that your perception also?

      +Beaute' Naturelle Hi --- when it comes to cleanup, I think both models would be pretty much the same. My main consideration here was the capacity of the machine --- unless you have a huge sink, or even bigger dishwasher, any unit larger than the 5kg machine is going to be impractical, and difficult to clean. The machine I featured is the 3kg unit (7lb) and fits quite comfortably in my sink and dishwasher.
