This video of your Nonna cooking for you is my favorite, Vincenzo. Although the ending when you two enjoy the food together, brought back memories of the few times I got to enjoy a meal that my Grammaw had made, just for the two of us. One time, she made us breakfast of eggs, potatoes and porkchops fried in milk. I've never seen or heard about cooking porkchops that way. But they were delicious. We had a very large family, so it was rare when we got Grammaw all to ourselves. 🙂 She was born in 1886, and lived to 98 years old.

She will never understand how amazing she is. She is so humble, honest and kind. Everyone knows her in her town and she likes when people stop her to say how good she is on camera hehehe you are right, nobody can make food taste as good as nonna. i can recreate this a million time and will never taste as good as nonna
Real nice Nonna , simple and super. When I do this sauce I follow what a Greek pal showed me back in 1972 , to combine with large green lentil and or chick peas / black eye beans. Sauce starts same with onion and carrots, celery if we have it cook in olive oil BUT with some garlic then pasatta, crushed peeled tomato and some tomato paste and generous olive oil n salt added for long slow simmer with bay leaf ……add to pasta and or add in the lentils or what ever during majority of cook ….long n slow . I’ve been known to add bacon chunks / lardons early in the cook ……all lovely stuff

I made your Nonna's sauce today using rigatoni (since I didn't have spaghetti on hand) and it was delicious and so easy to make. I used Mutti Pasatta and followed her instructions!! Will definitely be making it again!! 👍
Your nonna is sooo cute! The flavour that Nonna’s produce is different, it’s Italian village style that no one can replicate. and some day I’ll be wishing for a nonna style village pasta but It wont be possible. I also put pasta forno in my top 3 pastas.

But I'm confused you learned me to never put pasta in the plate and the sauce to mix it since you need to cook it together with some pasta water. Why is this recipe an exception and when to do it or not please ?
Hey there! You are correct that usually, we mix the pasta with the sauce while it's still cooking in the pan. However, for this recipe, I wanted to showcase a different technique where we cook the pasta and sauce separately to create a different texture and flavor. It's always good to have different options in our cooking arsenal, right? 😊
💕NONA!!! Where is MY plate?! 😆 Bellisimo! So simple but done perfectly. I usually like to make my sauce this way too, except next time I will try the celery stick whole instead of chopped. I usually also add dry basil (we don't have it in season often in Canada), as well as thyme and oregano dry...a touch of tomato paste with the herbs then the passata. Nona is right, the longer it cooks, the better! Grazie Vincenzo!

just be aware that it will be more bolognese-like then 😅 seriously, it's often undererstimated how much of the significant bolognese flavour comes actually from the celery giving it's flavours into the soffritto! but who would not like this flavour in his sauce? so have fun and enjoy your meal :)

You never ever pour the sauce on the pasta. You always put the pasta in the pan with the sauce and mix and toss.
You say it’s perfect for vegetarians but parmigiano reggiano has an enzyme from animal rennet (calf’s stomach). So cant be vegetarian

No garlic for this recipe, as we would like to avoid the overpowering flavor of the garlic and which could alter the simplicity and the lightness of this dish.
May the younger Italians follow in the footsteps of the nonna’s and not listen to these fake chefs who always try to tweak a good old fashioned tried and perfected recipe.I bet your mamma taught you how to cook.

The pasta looks overcooked and a bit like mush.
The sauce needs some basic seasoning and of course garlic.
2/10 for me.

Wait! I thought the pasta was supposed to go directly to a separate pan along with the sauce and you mix it along with the pasta water. What's the difference between this one and your "How to make spaghetti with Pomodoro" video?
Great recipe im sure it tasted well. I tried it and it was not very good at all. I can cook a lot but simple tomato sauce seems too difficult.
