  • How I smoke Oysters on the cheap to use for salads, pizza, crackers and cheese etc.
    Oyster brine for 3 dozen oysters. Double for more
    1/2 qt filtered water
    1 C pineapple juice (or vermouth or sweet white wine)
    1/8 C Kosher salt
    1/8 C light brown sugar
    1 Tbsp soy sauce
    3 bay leaves
    1/2 t garlic powder
    1/2 t white pepper
    For large to jumbo oysters I recommend parboiling them for 3 min prior to smoking or they will not cook thoroughly.

    Grace and peace to you and your family.
    #1: never rinse seafood (oysters) with tap water.
    #2 : every single ounce of that oyster liquor (slime) is liquid gold!
    #3: never parboil/boil oysters, no matter how thick or big they are. use a sheet tray in you smoker to reduce liquids.
    #4: If your spouse has a seafood allergy; NEVER! EVER! prepare or cook seafood inside! That’s reckless..

      Good deal, there is a mistake in the video that was corrected in the comments, only use 1 c pineapple juice instead of 3 cups. Hope you enjoy.

      You bet we do! They have the most flavor of Gulf or Atlantic. I grew up on Gulf oysters and Pacific are better hands down. Thanks for watching.

    In the video you mention 3C of Pineapple juice however in the description it shows only 1C

      Actually it is not 3 cups which I said by mistake, it is better with only 1 cup
