For anyone who plan to visit Hungary for an authentic goulash sometime: don’t be surprised that the goulash is actually a soup. This one here is called “pörkölt”.
There are huge variances for any food dish. This is a goulash (being a spiced beef stew) how ever it may not be the goulash you are used to. Take a trip to Ireland sometime. Travel around and have Irish stew in many different regions. Or go to Atlantic Canada and drive around to have seafood chowder in the different areas. Try touring Italy for ragout or sausage and peppers.
I don’t know what it is about goulash that really brings out the “it’s not REAL [fill in the name of dish]” police. It’s just food, people, not cultural appropriation.

When i make mine I marinade the meat with the paprika and salt while I'm cutting the onions instead of adding the paprika later I get great delicious results every time. my tip is use double the onions that you use meat. If you try my method let me know how you like it!! :)
20 years cooking.... you should have fried and brown the meat first until the pan become little darker, take out the meat and sautee the onion on the same pan afterwards... Try it.. Adds flavor to Gulash

Only brown the onions, (ralativ dark / caramelised) after that put in the meat (1 to 1.5 inch cubes) Put in the paprika powder, other spices and tomatoes. Ad water or beef broth. Let this simmer for 2 - 2.5 hrs. The onions give the sauce its binding.
Listen, do you even know what gulyas means ? There is no "Austrian gulyas". A gulyas is a herd keeper in Hungarian language and the meal gulyas is a simple soup that they used to eat when being away with the herd, sometimes for several months. As many have already clarified it above, this is a porkolt, which is fine just don't call him gulyas.
