I had to laugh when I read your description, Michael...because I just now (in 2019) saw the Cracker Barrel commercial and wondered if anyone on UA-cam had mastered country fried turkey. I knew I wanted something different for dinner Thursday. I goggled country fried turkey breast and found your recipe. I’m so excited to try next week. I hope I can find the turkey cutlets here in Louisiana.

This was not cheap, but not that bad either. This was $7 and some change. Three slices about all the same size, so this could be anywhere from 3 to 6 servings. I used a separate slice and pan fried it with salt/pepper, then heated up some Dona Maria Mole (Mow Lay) Sauce. I used to go to Tijuana almost weekly back in the day. Would eat sometimes at Sandborns. Sandborns is like a Denny's but in Mexico. Sandborns has a few specialties and one of them is Turkey in Mole Sauce. I had to try that and the first time I had it .... well it was unusual... it got better with each bite, to the point that I really like the Mole Sauce. I should video that and show everyone what it is. It certainly makes turkey taste different. The gravy for this... I did use some milk and some water :) Thank you for everything Barb, Michael
Cool story about Tijuana. Today's times probably not too many feel safe going there. The Mole sauce - was it made with hot peppers, or those big green Mexican peppers? And did it have chocolate in it? I don't like chipotle though. I also wondered how you made the pan gravy, I figured you added milk. That can be tricky sometimes to get it to thicken just right.
Hi Geezermann, the Mole Sauce tastes just like the sauce from the Sandborn's Restaurant. It is not spicy or sweet. I did not look at the ingredient list on the jar. I would say the average home cook in Mexico would not make the Mole Sauce from scratch in their kitchen. ~michael :)

How do you know the cooking time so that the meat is thoroughly cooked? Also, do you know if this is true - if after you dredge the meat in the egg/flour/milk mixture if you put it in the refrigerator for at least 15 minutes that the coating will adhere to meat better when you fry it and not fall off? This really looks so wonderful and would like another type of meat to use during the week; I will give this a try. New to channel. Gale Flowers
Yes, allow the floured product to rest on a plate in the fridge (uncovered) helps a lot for it to adhere, an hour is good and you can do it eight hours ahead uncovered. Experience tells me how long to cook something like this. If something is thin, it does not take long at all. Now if I bake/roast a chicken, I use a probe thermometer. I dislike over cooked chicken breast and I believe nothing can bring it back from being dry. Thank you Gale! ~michael
