Great idea! I think a mtb or gravel bike with minimum 2 inch tire would be perfect, especially if you make it an overnight! That whole area of Anza-Borrego is open for dispersed camping so it would definitely be perfect for that.
I believe it's already down there. This was in Anza-Borrego Desert State Park and I started at the Canyon Sin Nombre entrance, heading northeast through the badlands, ending at Fish Creek. Hope that helps.
