I recommend buying the best smoker the first time and you’ll never regret it. I highly recommend driving up to Ponca City OK and talking to the professionals at Cook Shack. We got the ten dollar tour when we picked up our smoker and everyone was very very nice. The only problem people make is not buying one the next size bigger and never want for more room. We have three of their smokers in the family and my brother in law swears it’s the best piece of equipment he’s ever purchased.
I had a bullet smoker when I was 18, until midway into my 30s. You can get by with a little bullet smoker but it’s a toy compared to a proper offset or full size smoker. Once I got a proper offset smoker I had regrets not switching sooner… so much easier to keep at temp, used less charcoal, less wood and cooked food better: Smokers don’t have to be fancy, but you’re more likely to use it if it’s a nice experience.

Remember for everything extra there are always additional charges. Customers complained about a $200 processing bill for a whole beef. Now processing is running over one dollar per pound hanging weight plus butchering. Another thing to remember is the more special cuts like ribs, soup bones and dog bones the more weight you’ll take home. But, you’ll wonder where all of your hamburger went to. I was surprised canning meat and ox tail weren’t mentioned.
@ Yep, we mentioned what there was an extra cost for and the fact that we wanted to cut down on the amount. Of ground beef we got this round. This is about year 15 for us so we definitely branched out this time to some new cuts!
Awesome job explaining a cut sheet, no one really does a great job like you did explaining how and why what cuts you want. I'm filling ours out tomorrow and now I'm educated more on how that works, thank you for doing a video on it, keep up the great work.

Tri Tip is pretty popular cut here in CA. It's great to throw on the BBQ. The grain of the meat runs different ways about half way so just pay attention while cutting. Enjoy

If looking for smokers of top quality in Texas is Mil scale made in Lockhart alot of pitmasters here in Texas use mil scale . The quality is unbeatable.
When I was a kid my dad hated butchers because he felt they were dishonest. He eventually bought a walk in cooler and he started doing it himself. We mysteriously started getting more meat and quit getting oddly poor quality steaks mixed in with the good ones.
That was very interesting Cody. I know how to do a deer to have it processed, but have't seen a beef sheet. I had some of my axis deer made into chorizo and talk about good. It made the best soup as you didn't have to flavor it at all. Yummy! So on the price as you had yours done, what was the ball park price? Just curious. Thanks again!
Your talking my language here. I cut meat for 10 years in a packing house and 25 years in retail in grocery stores. You want all the fat you can get on a carnivore diet.
When you get your chuck eye steak take a strip of bacon and wrap it around your chuck eye and put a tooth pic in the bacon into the steak and put it on the grill. Gives it great flavor and tender and juicy. Hope you try it.
