I absolutely love your recipe! And the dish looks so delicious and appealing as well. My only issue as far as the ingredients are concerned is that I do not have access to fresh Curry leaves or the dried variety either where I live in the Southern US state of Georgia. Can anything else be substituted or can they be left out entirely from the recipe without signingnificantly altering the overall flavor of your delightful dish? Thank you! Cheers.

Awesome recipes. I want to try them with boneless skinless chicken thighs. About how much would I decrease the cooking time when I add the meat? Reduce by one third? Also can I half the oil in the recipes or even use half oil & half water when the oil is used. Thank you so much
Thank you Josephine ...yes, you can reduce the time till chicken is tender and reduce the oil too. But add very little water whenever the chicken tends to stick on the pan but continue to fry... shouldn’t be watery. Good luck 😊👍🏻
