How to Make Peruvian Roast Chicken-Pollo a la Brasa with Green Sauce

pre-heat oven to 425˙F
marinade chicken with:
3 tbsp olive oil
1/4 cup lemon juice
2 tbsp garlic paste / grated garlic
1 tbsp kosher salt ( if you don’t have kosher salt use 2 &1/2 teaspoon regular salt)
2 tsp paprika
1 tsp black pepper
1 tbsp cumin powder
1 tsp dried basil
2 tsp sugar
bake for 20 minutes until chicken gets golden
turn the heat down to 375°F & bake for 1 hour or until the chicken is fully cooked
Green sauce:
3 jalapeños
1 cup cilantro
2 cloves of garlic
1/2 cup mayonnaise
1/4 cup sour cream
1 tbsp fresh lemon juice
1/2 tsp salt
1/8 tsp black pepper
2 tbsp olive oil
blend everything until smooth

I love this recipe, thanks for the video! I used a half full beer can instead of a roasting stand so the steam kept the chicken moist. I think next time I'll add a little liquid smoke to the marinade and reverse the cooking order so I have more control of the skin crisping.

Great I love it ,but the original recipe instead of the lemon juice we use beer 😊 it's really good ,I'm Peruvian and el pollo a la braza is the most popular "fast food " to order like in Mexico they have tacos , USA have Pizza or burgers, for us.. is this pollo a la braza ( peruvian roasted chicken)with fries and salad 😋

Just made this today. Came out amazing. I have the multifunction air fryer/ rotisserie. Mine was cooking too fast externally at 375 so I dropped the temp down too 300 to get the internal temps right. This was amazing!!!

Yes it will work with chicken cutlets. The baking time will be different tho! You can probably even cook the chicken cutlets on stovetop or even grill them.

You can definitely use a pan to bake the chicken. Just spray the pan with non stick cooking spray before placing chicken!

Drying the chicken with a napkin first would make your chicken absorb of the sauce but looks damn good already.

You can skip it but it add a nice flavor. It’s not sweet

Does anyone actually know the green sauce recipe like top restaurants like Lamar's in SF. It seems many online recipes they keep something out. Like they don't want to share the full recipe? Please recipes that has the full recipe. Thank you in advance.
The key ingredient is huacatay that is an herb (also called as peruvian or andean mint i think) that you can find frozen in mexican or latin grocery stores but cilantro makes a good replacement as well

This came out well but I didn't get much flavour inside the chicken. I'm going to buy one of those injection things so I can inject the marinade into the meat for maximum flavour.

Flower Child it was so good. Everything was perfect. I recommend cooking some red potatoes with the chicken and I substituted the lemon juice for lime juice in the sauce.

made this recipe over 5x. we always use oregano bc i dont like basil taste and it turns out good. my husband is Peruvian and says its still missing an ingredient..maybe huacatuay? says this recipe taste close to what he's use to though ; )
@@angelangel5252 yes they don’t actually use peruvian ingredients in this. but it looks good. it may need huacatay and aji de panca for sure. the green aji is missing aji amarillo
The food looks good, but this is not Peruvian Roasted Chicken or at least it is not authentic. This dish requires aji amarillo and/or Huacatay. Those 2 ingredients give this dish that distinctive "Peruvian flavor". I am sure it taste good, but without those ingredients it is just roasted chicken.
