I've been training my horses since i started playing. I buy a new one when the one I'm training has reached level 13, so that it gives me a reason to max it as soon as possible and ride the new one. I have more than 100 horses and this has always worked out for me! I do not do all the races everyday, I only do Starshine Ranch, Druid Paddock and temporary races 8ex: birthday races). You'll max a horse in a week if you follow this method! If you have several untrained horses I have another method: always start from oldest to newest and train them all first at level 10, then max them out in order. This way you won't get bored!

I think it mainly has to do with the fact that I have never bought star coins meaning my account income comes strictly from the 100 star coins per week + the very rare occurrence of a star coin code. I know training can be boring sometimes but there are so many ways to make it interesting. One thing I have been doing is having the same training route since I've started playing 6 years ago. This is such a nostalgic trip to take every time I ride and honestly make's training so much fun. I also have multiple playlists at hand to blast while I'm out racing which actually helps pass the time since I normally zone out and sing while my muscle memory takes over. But also a thing I love to do with my routine is plan out what daily's I can do along my training route. I do this mostly to accumulate shillings and eventually buy something with said shillings. It's overall a very rewarding system for me and I love it so much. Plus, whenever I'm waiting for my starcoins to grow, I'm able to run around Jorvik and do so many things to pass time that honestly bring the game back to life for me.
Nowadays with soo many races, if you can and like to play SSO for a whole day (Not literally 24 hours!) then you can try to finish all of the races you have for the day, and I think you can be done in 2 (or 1,5) days!
I had 40 horses to train and i can say that at this point i have all my horses maxed. A huge help are the events starstable adds for example i trained the majority of my horses during the camp western. I just grinded gold amd actually managed to max a horse from level 2 to 15 in like a few hours.(plus all the races) I say keep a look out for the events !
races on druid paddock with reputation can also give soo much additional xp for horse so its good when you dont have too much time or dont have more races to do in a day. also whole starshine ranch can give 2100 exp in total (4 animals, 8 races) so you can focus on this place first if you want to train your horse faster in only one place
When i was younger i used to train so much but later i stopped and bought mroe and more horses i have 40 horses to train and this is def gonna help me!

Another tip, watch a serie, youtube videos, a movie or listen to music while training, it helps alot!
