Today I'm learning how to cook Ekpang Nkukwo, a dish from Cross Rivers State. It wasn't a pleasant experience, but the meal was delicious, so it's safe to say it was worth it. I also have plans to adopt a pet so stay tuned for that.

The trick to ekpang is that if you intend to make it to tomorrow, prep it all, wrap and leave your pot in the fridge, then cook the next day.
It shortens the cooking and eating process
