Pork Satay & Peanut Sauce | Nasi Impit | Compressed rice
猪肉串 | 花生沾酱 | 沙爹 饭团
*This recipe makes about 30 sticks satay
The Pork Satay 猪肉沙爹:
A:500g Pork chop loin/Belly 猪扒肉/五花肉
B:
3 Stalk lemongrass 香茅 3支
3 Cloves garlic 蒜头 3瓣
3 Shallots 3颗小洋葱
1tsp Galangal powder 1茶匙
1tsp Fennel powder 1茶匙
1tsp Cumin powder 1茶匙
1tsp Coriander powder 1茶匙
1/2tsp Pepper 胡椒粉 1/2茶匙
1tbsp Sugar 砂糖 1汤匙
2tbsp Oyster sauce 蚝油 2汤匙
2tbsp Light soy sauce 生抽 2汤匙
1/2tbsp Dark soy sauce 黑酱油 1/2汤匙
1tbsp Cooking oil 植物油 1汤匙
C:
Cooking oil 植物油
Bamboo skewers 竹签
The Peanut Sauce 沙爹花生沾酱:
A: Ground peanuts 花生碎 300g
B:
1 Stalk Lemongrass 香茅 1支
5g Dried chilies 辣椒干
10g 小葱头 Shallots
5g 蒜头 Garlic
5g 姜 Ginger
5g 黄姜Turmeric
5g 南姜Galangal
25g 水Water
C:
80g Cooking oil 植物油
600-700ml Water 水
1/2tsp - 1tsp Salt 盐 1/2 - 1 茶匙
70g - 90g Sugar 砂糖
The Nasi Impit (Compressed rice):
300g Rice 白米
600g Water 水
1/2tsp Salt 盐 1-2茶匙
6 Pandan leaves 6片
Bamboo mat 寿司竹卷
Parchment paper 烘焙纸
6-8 Banana leaves (20 x 20cm) 香蕉叶
Twine rope 麻绳
The Pork Satay 猪肉沙爹:
1.Soaking 50 bamboo skewers in water overnight. This will prevent them from burning when cooking 竹签浸泡在水里,静置隔夜
2-A.Cut the pork into cubes 把猪肉切成块状
3-B.Blend lemongrass + ginger + shallots
把香茅 + 姜 + 小葱头搅碎
4.Marinate pork with all the ingredient B overnight
把猪肉 + 材料B混合均匀,冷藏腌制隔夜
5.Thread the pork onto the skewers
第二天,用竹签把肉串起来备用
6.Grill satay over the charcoal grate on medium or medium high heat for 3-6 minutes per side. Brush with cooking oil in the middle.
用火炭将沙爹烤至熟即可
中间需不时在沙爹上刷上植物油
7.You may grill the satay on the skillet too
或者用平底锅、小火,煎至熟即可
中间需不时在沙爹上刷上植物油
8.Or grill the satay in the oven, at 180 ℃ , for 10 minutes. Then flip it over and grill for another 3-5 minutes
或者在沙爹上刷上植物油,放入已预热烤炉,180 ℃,烤10分钟后翻面,再烤3-5分钟即可
The Peanut Sauce 沙爹花生沾酱:
1-A.Toast peanuts in a pan without oil until darken in color and fragrant, remove from heat and set aside
花生倒入干锅炒香、颜色变深,起锅备用
2-B.Blend the ingredients B and set aside
材料B搅打成糊状
3-C.Heat the oil over medium heat and stir-fry the pounded chilli mixture until fragrant
4.Stir in roasted peanuts + water, bring to a boil
5.Add salt and sugar to taste
6.Allow it to simmer over medium-low heat for about 20 minutes until the sauce thickens
中小火煮至沾酱变得浓稠
7.The peanut sauce is ready to be served
*Satay peanut sauce can be made in advanced and kept refrigerated for up to 3 days, or you may store it in the freezer for up to 6 months
Just thaw the peanut sauce then steam it before serving
8.Serve pork satay immediately with the peanut sauce, cucumber, onion and compressed rice/ketupat

这是ketupat 還是lontong ? 一个是用椰子葉包,另一个是用香蕉葉包😂😂😂而且形状也不同的,🥹🥹🥹
