Heathers' Italian Sub Rolls with Sesame Seeds 1 1/2 cups of warm water 1 tblsp instant yeast 2 tblsp sugar or honey 6 cups of all purpose flour 1 cup of whole milk 2 tblsp softened butter 2 tsp salt Any flavoring of your choice - garlic, rosemary, thyme etc (optional) Mix all ingredients together until it comes away clean from the sides of the bowl. Mix the dough for a further 5 minutes. Grease the bowl and return the dough. Cover with a clean, damp cloth and let to rise/proof for 1 hr or until it has doubled in size. Punch down the dough and turn it out onto a clean board/worktop. Cut and shape the rolls and place on a greased baking tray. Cover with a damp cloth for the 2nd rise and put in a warm place. Brush with egg wash and shake over the sesame seeds. Bake at 350 degrees F/ 180 degrees C for 25-30 mins or until golden brown. I have some bread questions I hope you can answer! 1. Is it possible to freeze the dough for a later bake? At which point would I freeze if it ok? After kneaded? After first or second rise? 2. I love hearing your children playing in the background. One day, their favorite memories will be of their mother cooking in the kitchen, and the aroma of bread baking in the oven, AND they will have video diaries of the whole thing! Such a blessing! Oh, what I would give to have video of my mom and my grandma baking bread! Your children will get a real kick out of telling the story to their own children of how their grandma was quite the UA-cam rockstar in her day and how her recipes were shared all over the world. And your grandchildren will take delight in seeing Grandpa be there to be the taste tester of all of Grandma's goodies. : )
Made these today and sprinkled the top with everything bagle seasoning.. So delicious! This recipe is a keeper. Will serve with steak and cheese and sausage, peppers and onions.
Great description. You give a very detailed description of how the dough should look and feel along the way that many people leave out. I just got my first stand mixer for Christmas and can't start making breads. This is going to be the first I try in my mixer. I'm hoping these sesame seed rolls come out like the rolls they use at the hoagie shop. I love those rolls. Thanks for posting this.
I made the sub rolls yesterday and they were great! I made Philly Steak Subs on them last night and making pizza on the tonight. Husband loved. I live in South Alabama and the humidity is so high here it took more flour but I'm learning thanks to you.
Just made these and am in the process of eating a meatball sub. :) As suggested, I used all purpose flour rather than bread flour that I usually use for baking bread and they were excellent. I did use 1 cup of milk-saw in comments that the recipe calls for 1/2 cup, which I will use next time. I ended up using quite a bit more flour because of the extra liquid. But didn't seem to hurt them any. I used bagel topping since I didn't have sesame seeds. This will be my go to recipe from now on. Thanks so much.

Therefore I have TV time and I have a great TV that my son bought me and I am able to watch UA-cam channels on it. I turn on your channel when I get into bed and binge watch it. You are one of the most pleasant people out there sharing their lives with us. Your laughter makes me smile and in the rare occasion that you do get on cam, I'm amazed at how pretty your smile is also. +The Kneady Homesteader I wouldn't buy anything with complex moving parts and/or a motor that had been refurbished. Especially with just a six month warranty. I would sell that before it breaks and get a new one. You are obviously braver than I am.

I've made this several times now. We love it. I've gotten to where with this one I prefer equal all purpose and bread. Tonight making some for Philly Cheesesteaks. Made a batch of plain and a batch with 2 tablespoons of an herb mix I made up (2 tablespoons of basil, 2 tablespoons Greek Oregano, 2 tablespoons Italian seasoning mix, 3 tablespoons garlic, 3 tablespoons parmesan). My house smells so amazing right now with the dough rising.

These are absolutely delicious!! I tried these today for the first time and everybody loved it. Made subway style sandwiches with these and I would rate it 10/10. Wish I could attach pictures if comment section allows it. Also, the full recipe yeilds 8 6 inch subs weighing around 140-150 GM's each.
I made these, sesame seeds and all, and they turned out beautifully. They were very big, but I also was making meatball marinara subs, thus the reason I was looking for sub bun recipes. LOL. Mine turned out awesome. I myself thought they were heavy, so I pulled out a lot of the center of the bun and then they fit the meatballs better. Thanks for the recipe, and I will keep you in mind for more of them when I am searching. :)
To make your flour into bread flour add 1 Tablespoon of Vital Wheat Gluten to one cup of flour. For instance five cups of all purpose flour in the bowl and 5 Tablespoons of vital wheat gluten. Now you have bread flour...Grocery stores carry it now for years. And I also use powdered milk too...
Adding a meatball sub to my menu at my little eatery and bar in the Philippines, and will fashion my meatball sub after yours. Have a plan for the bread to put 2 together on a cookie sheet, then 2 on the other side of the sheet. That way the rolls will have a hard bottom less likely to break open and get mushy and soft top. My oven is small anyway... Thanks a bunch for this good Italian roll recipe!

you can use regulary flour. the added gluten in bread flour makes the wholes in the bread more tiny. it also means you work it less than AP flour. basically invented with bread machines in mind because they don't work the dough as much or well as they should. to activate the gluten well for the tiny holes, slap the dough on the counter a few times. not all stores carry bread flour. I have seen it where I shop. they had to clearance it out because no one was buying it. it also costs more. they also don't carry gluten to add in. I've never had a problem with AP flour.

The KitchenAid PSM150PSMC with the 5-quart bowl watch carefully if more than 4 cups flour. 6 cups will climb the hook, over the hub and right into where the motor starts, probably push right inside if you don't catch it.

The Kneady Homesteader Actually I got the smaller Nutrimill mixer by Bosch. The Bosch ultimate was too big for me. The dough I made for the sub Rolls was perfect, soft but not sticky. I made 4 sub Rolls only and cinnamon buns......yum!
I would like to make the halved recipe, but don't see it below or on your blog.. I can halve the recipe easily, except sometimes the yeast is not cut completely in half. Do you remember if this is the case on the original recipe? These look wonderful and thank you for all your wonderful videos.

Hi!! I am brand new to making bread from scratch and I've noticed that sometimes a recipe will say to leave your dough overnight in the fridge. Does it matter if you leave it out for, let's say, an hour vs overnight in the fridge? This is all so overwhelming especially with all the different kinds of yeast, ugh.. I just love all of your vlogs by the way :)
+glenia monroy i have made ome atisan bread, which tkes 18 hours to rise..... vs say an hour or 30 minutes like pizza dough. it all depends on what you're going for. i will make a no-knead bread with a long rise...... super easy, just time consuming. I will try to make a video of that sometime soon for ya!!! it is pretty fun once you get into it and make several different types of breads!
Don't you find that scoring the rolls before placing in oven deflates them? I have that problem. I'm thinking I should score them (with the knife) before the last rise? Thanks. Gardis in CT

I used a recipe from you tube to make hot dog buns. well either britain has bigger weiners for hot dogs than we do or my yeast rises more but the hot dogs for supper turned into subs. the buns were great just too big for weiners. :) Think I will try yours for tomorrow nights sub dinner. :) oh yes I have a 4 year old so one will be much smaller than the others.

These are absolutely delicious!! I tried these today for the first time and everybody loved it. Made subway style sandwiches with these and I would rate it 10/10.

I made these, sesame seeds and all, and they turned out beautifully. They were very big, but I also was making meatball marinara subs, thus the reason I was looking for sub bun recipes. LOL. Mine turned out awesome. I myself thought they were heavy, so I pulled out a lot of the center of the bun and then they fit the meatballs better. Thanks for the recipe, and I will keep you in mind for more of them when I am searching. :)
To make your flour into bread flour add 1 Tablespoon of Vital Wheat Gluten to one cup of flour. For instance five cups of all purpose flour in the bowl and 5 Tablespoons of vital wheat gluten. Now you have bread flour...Grocery stores carry it now for years. And I also use powdered milk too...

Adding a meatball sub to my menu at my little eatery and bar in the Philippines, and will fashion my meatball sub after yours. Have a plan for the bread to put 2 together on a cookie sheet, then 2 on the other side of the sheet. That way the rolls will have a hard bottom less likely to break open and get mushy and soft top. My oven is small anyway... Thanks a bunch for this good Italian roll recipe!

you can use regulary flour. the added gluten in bread flour makes the wholes in the bread more tiny. it also means you work it less than AP flour. basically invented with bread machines in mind because they don't work the dough as much or well as they should. to activate the gluten well for the tiny holes, slap the dough on the counter a few times.
not all stores carry bread flour. I have seen it where I shop. they had to clearance it out because no one was buying it. it also costs more. they also don't carry gluten to add in. I've never had a problem with AP flour.

The KitchenAid PSM150PSMC with the 5-quart bowl watch carefully if more than 4 cups flour. 6 cups will climb the hook, over the hub and right into where the motor starts, probably push right inside if you don't catch it.

The Kneady Homesteader Actually I got the smaller Nutrimill mixer by Bosch. The Bosch ultimate was too big for me. The dough I made for the sub Rolls was perfect, soft but not sticky. I made 4 sub Rolls only and cinnamon buns......yum!
I would like to make the halved recipe, but don't see it below or on your blog.. I can halve the recipe easily, except sometimes the yeast is not cut completely in half. Do you remember if this is the case on the original recipe? These look wonderful and thank you for all your wonderful videos.
Now I know what rolls to make for dinner tonight... wth am I doing up at 3 am...LOL.... Oh, I got my 3 ring binder and all the inside stuff to make my Homesteading Book..little of Prep, little of gardening, Lot of canniing, cooking and baking.. :o)

Hi!! I am brand new to making bread from scratch and I've noticed that sometimes a recipe will say to leave your dough overnight in the fridge. Does it matter if you leave it out for, let's say, an hour vs overnight in the fridge? This is all so overwhelming especially with all the different kinds of yeast, ugh.. I just love all of your vlogs by the way :)
+glenia monroy i have made ome atisan bread, which tkes 18 hours to rise..... vs say an hour or 30 minutes like pizza dough. it all depends on what you're going for. i will make a no-knead bread with a long rise...... super easy, just time consuming. I will try to make a video of that sometime soon for ya!!! it is pretty fun once you get into it and make several different types of breads!

I used a recipe from you tube to make hot dog buns. well either britain has bigger weiners for hot dogs than we do or my yeast rises more but the hot dogs for supper turned into subs. the buns were great just too big for weiners. :)
Think I will try yours for tomorrow nights sub dinner. :) oh yes I have a 4 year old so one will be much smaller than the others.
grandma lynda what you can do with the larger bun is make a bigger hot dog you can also use the bigger bun for a sloppy dog.
