Sorry for hearing that. Probably that was an old bird you cooked. As an alternative method you can pour a cup of water to the goose, cover it and bake at 320 degrees (fahrenheit) for 1.5 hours. If it's not crispy after that you can remove the foil and bake it at higher temperature for an additional 15-30 minutes until it gets golden brown.
I followed your recipe. Goose came out tough as boots.
