I live2 or 3 miles from where they grow the chilies and process them in a plant. When you drive by the plant in the summer at harvest time and the plant releases steam your mouth literally waters uncontrolably it smells so good even if very spicey hot. This is the original Rooster Sriracha Sauce.
I've had rabbit done this way, think it was one of the giant breads. But I will have to try it with a hare, though the only one available to me is a Jackrabbit, which is a bit gamey and tough, normally needing a long braising or stewing to be good and tender....
My cousin got into meat cutting and butchering 6 years ago, he is in his mid 20's and loves his job. The art is not lost, you are an inspiration to younger people to keep supplying youth with a role model.
