I've had rabbit done this way, think it was one of the giant breads. But I will have to try it with a hare, though the only one available to me is a Jackrabbit, which is a bit gamey and tough, normally needing a long braising or stewing to be good and tender....

I live2 or 3 miles from where they grow the chilies and process them in a plant. When you drive by the plant in the summer at harvest time and the plant releases steam your mouth literally waters uncontrolably it smells so good even if very spicey hot. This is the original Rooster Sriracha Sauce.
A thought... if you had enough rabbit (as in you raise for meat so you process a number at a time), could you prep the racks and then freeze them so that you can have a good number for an event or meal. Thoughts?

Scott Rea yeah i agree ya gotta do what the land owner asks. i shoot pigeons year round to keep my permission so im being a hypocrite i guess lol. gotta say tho ive never known hares be high enough in numbers to cause a noticeable amount of damage.
+jay71512 no worries..the permission this hare came from has an extremely high amount of hares, and muntjac. And the owner wants them thinned out a bit..you know the drill Jay.. All the best

Couldn't agree more... Next step: buy half a pig from your local artisan butcher, and have some broiler chickens in the backyard :)
You do need quite a few, and perhaps a few more.
This guy could handle any survival situation. He'd just butcher a badger or a crow or something and whip up some sort of jus from wild berries.
