You can use a dehydrator they just won’t be the same texture. I slice thin for the dehydrator to make “chips”. I have done “chips in my freeze drier as well. Now I will make “Cheetos”!

Yes, they would store for a couple years if using a good quality olive oil and packaging correctly.
