    -130 g sugar

    -350 g crackers
    -200 g melted butter

    -150 g sugar
    -Grated peel from a lemon
    -900 g cream cheese
    -Juice of half a lemon
    -½ of the prepared lemon cream
    -300 ml whipping cream
    -1 Whip Cream Stabilizer

    For the Lemon Cream:
    1. Mix the yolks and egg together.
    2. Add the sugar and mix well.
    3. Incorporate the grated lemon peel and mix.
    4. Add the lemon juice and stir until combined.
    5. Place the mixture on low heat and stir continuously until it thickens.
    6. Remove from heat and add the cold butter, mixing until fully incorporated.
    7. Transfer the lemon cream to a jar and refrigerate.
    For the Dough:
    1. Crush the crackers in a blender until fine.
    2. Mix in the melted butter until the mixture resembles wet sand.
    3. Press the mixture into a baking pan to form an even layer.
    4. Bake at 180°C (350°F) for 10 minutes.
