I haven't found a way to replace the standard email button with a Flow. You can add a button in the Action area at the top of the page or you can embed the screen flow on the page. I do this on a tab and name the tab Email to get it close to the standard functionality.
That's a good question. I think the email will show up there automatically on cases. I could be wrong about that though. I recommend giving it a test and seeing how it works.
How would you go about hiding the email composer once the Send button has been clicked?
How would you go about removing the "," at the end of the collection variable?
