You can look and see every coat the game has in collection I believe, instead of guessing because the game doesn't follow genetics that much. It's just a chance for your horse to pass a rare marking or color and then they randomize it sometimes for a surprise. Like the frost coat( blue horse)
I played for a while a few months ago, but it truly brought out my toxic competitiveness. and it's changed a lot since I played it. maybe I'll get back to it one day. 🤷

You can change the names of the horses by going onto their passport and up by their name there is a symbol click on that and there is lots of name choices
