      Make sure you Harvest meat around October when it’s starts to be high 50 degrees out & hang it outside with a bag over

      Work with the seasons like back in the old days. Harvest when it's frosty enough to kill flies and chill the carcass. The room itself can be temperature controlled in the basement easily. That'd be a great conversation to have! This process is actually designed for exactly that situation!
