How do you keep water from pooling, when doing wet on wet, where paper rolls up and dips? I felt like I had too much water in low spots, and it was dry on high spots.

I use Canson 140lb cold press watercolor paper. It's nice and thick so it could be your paper. You can tape your paper down if it's helpful and that will keep it a bit flatter. But this just kind of happens and really if you can watch for it and lift where necessary, you'll keep some control during the wet on wet! Hopefully. Haha. :)

Oh no! That can be so frustrating. Maybe try again and when you add the red and green try to limit your water and watch to see how far they're traveling? Try to leave some white space between the colors? I hope this helps!
