A 'beer sommelier' explains how pouring a beer the wrong way can give you a stomach ache

  • How do you pour a beer? Turns out this popular pouring method - that results in little to no foam - is completely wrong. And can actually cause stomach issues!
    Max Bakker, a Master Cicerone (think a sommelier for beer) and High-End Educator at Anheuser-Busch InBev shows the correct technique.

    In Germany a beer has to be served with foam on top to prove that it isn't stale. However the foam in German beers is like whipped cream and can extend above the rim of the glass without pouring down the side. In some parts of the country that's called a "Feldwebel" or "sergeant". Prost! 🍺

      Different beer styles have different types of foam. German lagers are likely to have thick, creamy heads, made up of very tiny bubbles, whereas IPAs tend to have a more rocky head. And some beers don't have much foam at all, or it dissipates quickly. It's all part of whatever style they are.

  • @DanBlabbers
    @DanBlabbers 2 роки тому +149

    Honestly this makes a lot of sense, I don’t think he explained it as well as he could. Bartenders would pour it to reduce foam so they can quickly fill the glass and give the customers their order as fast as possible. If you’re drinking beer at home, I’ll pour it heavy to get a lot of foam, wait a minute then pour at a 45 degree angle or so. Foam settles into beer and releases gasses.

    • @CrizzyEyes
      @CrizzyEyes 10 місяців тому +10

      @@him050I don't know what kind of beer you drink but no beer goes flat in a couple of minutes after being poured, regardless of the technique. The point of this is to reduce carbonation not eliminate it. In most central European cultures (Germany etc) a head of foam is preferred or even demanded for each beer.

    • @him050
      @him050 10 місяців тому +2

      @@CrizzyEyes well he said broken the CO2 out of the glass. That would be imply to me that this man’s goal when pouring a beer is to remove all the CO2.
      If you think that people on the continent know why they like their beers with large heads, you’re deluded. They just have them that way because it’s the way it is. There’s no reason behind it to their knowledge other than it just being how it’s done.

    First type of pouring is what in my area we might call "Jahrmarktsbier" (market fair beer), which you might come across at busy hours on market fairs because the number of customers makes it difficult to pour the beer properly (which takes slightly more time if you don't give out the bottles to the customer). Hence to speed up the process they might opt for pouring-version-1.

The act of putting the beer in your mouth releases the carbonation. This is pseudo-chemistry from someone who wants to display their apparent expertise & presentation. The head on a traditional beer comes from the initial pump out of the barrel. That head is then displaced from the glass by 'un-frothed' beer. Pouring like this is an attempt to replicate a barrel beer by appearance whereas it simply flattens the beer and ruins it's texture.

    The problem with ordering a draught beer at most breweries or pubs, is that they serve in a standard "pint" glass. And while technically it is 16 oz., that volume is fulfilled only if the glass has liquid to the very top. Draught beer should be served with a head by having it poured into an imperial pint glass. The additional 3 oz. that the glass can hold will accommodate an ample head while assuring the customer gets an honest 16 oz. of brew.

    I don't really like drinking anymore, so when I do have a few I now notice how much better it is with a foam head, and how much worse it sits in the stomach without one

    Wow so if I chug a beer from a bottle and then put a stick down my throat and stir it into my stomach to release air it will give me a stomach ache? You don't say.

      no need for the sarcasm.
      it only gives you a stomach ache if you chase it with a nacho made of tampons.

    Great! I find this out 9 years after I quit drinking which I did largely because I hated the bloated feeling.

      This is nonsense. You still get bloated from beer and greasy food... who would have imagined....

    The foam and its texture is part of the experience too. Beer in Germany is always served this way. Then you also can see when it is getting flat that it is time to finish the glass.
