they didn't switch out the pancake for a croissant. they shot the same scene over multiple days. julia's hair is more voluminous on the croissant day. these two shots are from the same sequence but likely weren't shot on the same day
@@joroman2kI’m sure everyone was aware of the change. And I’m sure the script supervisor pointed it out in her notes- “Croissant was replaced by pancake starting in take 14 - DO NOT USE takes 1-13!!!” and, for whatever reason (probably performance, but possibly an even worse continuity error) the editor disregarded the notes. This happens all the time and the script sup gets the blame (by the audience - not the filmmakers).

Wouldn’t an Actress know the mistake and speak up? I am not impressed with this mistake.
