You need to trim the sinew from the meat. You brown the meat to give it flavor and texture. In this case you have browned the sinew, and not the meat. what a waste of time. The whole dish is a joke.
You didn’t even wash the meat 🥩 that alone is disgusting 🤮 I’d say wood honey 🍯 is best for meat not sugar. But I like technique but it just could be hygienic 🤭🤢 oh boy!!
If you were to wash the meat, it would actually make it even more unhygienic due to the water during the process which can spalsh and drip everywhere, spreading the bacteria everywhere. Besides that, the moisture by the water would ruin the maillard reaction during the browning process of the meat, it would make it gray and tasteless instead. You are going to cook the meat for a very long time in a temperature which can already kill microorganisms, so why worry about it being unsanitary when the cooking process already kills all the bacteria. Hell in some countries people even eat raw beef, heard of carpaccio or tartare? Those are served raw. Its all about the way the meat is handled, if it is handled properly, no cross contamination can occur.
Actually, some countries have situations where it is commonsense to rinse the meat. Not everyone lives in places with the most modern or hygienic means. If you do, great. To refer to someone who must do so as a 'moron' really shows how blind you may be to life beyond yourself. Not all are as fortunate as you may be.
Kim Quinn you don’t have to live in a rich place to wash you meat. Yes we wash our meat before cooking due to impurities that come with it. #washyourmeat
