Hi, this is so good. However I do not use any kind of canola oil. I made this with monk fruit sugar and all butter . I used buttermilk . I also made my own quinoa flour. Very easy to do. The pancakes were delicious. All the substitutions because of my preferred dietary preferences. As a side note, your hard boiled egg recipe is the best. Thank you for sharing with us.

Perfect mix of flours. I may substitute buttermilk for the regular milk. Also, I make your hard boiled eggs all the time.

Thanks for this recipe Laura. I have a suggestion for you. Instead of Almond Flour, use Oat Flour, and instead of milk, use almond milk. The oats will make it a little more healthy, and the only thing that's bad is the butter... but like I tell my wife, butter makes everything better. Unfortunately, I have high cholesterol and heart issues, so I need to cut out the milk and butter.

I always use organic coconut oil in the pan! Adds a slight yummy taste but also super healthy!
