I see this old video is taking off for some reason so I just wanted to come here and say the baking time may be less if you live at sea level. Roasting/baking at 6200 feet elevation certainly changes things.
You’ve come so far with your presentation and professionalism! This was a good vid but your latest stuff is honed to a fine edge. Congrats! I love your stuff. Can’t wait to try some roast broccoli.
Came upon this video of you: your demeanor is so different now compared to two years ago. You've really laid on the enthusiasm this past few months instead of being more matter-of-fact (which was still very watchable - loved the pause to discipline your dog) Didn't see a pock-marked fridge in those days! Did you join an Italian restaurant between now and 2019? Recipes always fantastic.
Been on a roasted broccoli rampage the past year and a half but never made it this way before! Tried it for the first time tonight and it was an absolute game changer. You're killin the game!! Cheers
On Keto right now and broccoli was on the list of food I could eat. I've always dreaded it UNTIL now! This recipes is fantastic. Thank you so so much for sharing it. I actually crave eating broccoli now!
I've been looking for this recipe? I love it. The best recipe yet. I'll probably stop looking for others. Made a large batch for Christmas and it was gone in minutes. I've tried some of your chicken recipes and now they are a staple in my kitchen. I've learned a lot from you. Thanks, Jerry stop
I miss these long videos. Your personality seemed different a year ago, more relaxed, more confident, more free. Gotta get back to that Sonny. Ur fans adore u man
Outstanding video Recipe! I am glad I came across your channel. I’ve never seen someone create such a magnificent presentation! Very impressive! I can’t wait to see your upcoming videos.
I’ve tried your Brussels sprouts recipe already and they are delicious! I will try this next. I’ve only boiled or steamed them and eaten them with sunflower oil, salt and lemon juice so far, but this looks delicious. Also, I didn’t know about peeling the stalks of broccoli and eating them, so thank you for that. I love your channel!
Ive been going through your whole channel these past couple months, sorry if in reverse order. Really cool to see how much your channel has come in just a few years
for me one of the quickest and most effective way is to put it on high heat in the microwave for like 40 seconds, which keeps it bright green without any further more water content, then searing it in a ripping hot pan to evacuate any exces moisture, then hiding it with a little bit of oil for browning and then add the aromatics of your choice. nice channel. cheers from Norderney
that is a lot of extra work. JUST heat oven to 400 degrees . Put broccoli in plastic bag. Pour in olive oil . Shake bag to coat broccoli . Cover cookie sheet with parchment paper. Spread broccoli on cookie sheet. Salt & Pepper the broccoli and sprinkle spices on it ( choice of : paprika, dill, dried chives, etc). Roast in oven for 15 minutes, turn over for 15 minutes more. Allow to rest and enjoy. EZ clean up.
so refreshing to see someone reccomend the stalk! i love using it -boiled with carrot or roasted as you did here. i wonder if you ever made crumbed califlower florets? if not please try it its a fantastic veg and even a fingerfood to serve with mini dimsum etc. just boil, cool, crumb and fry. thanks for the content been binging your channel and i love it
Thank you for sharing. I season the broccoli with a bit of cayenne pepper and a pinch of smoked paprika as well as salt and pepper and put more oil and toss. I do change the season every now and then. But I put them on the barbecue and grill them. Broccoli is not the only vegetable on the barbecue, so are large chunks of mushroom pieces. Mushrooms are going on the hamburgers and the crunchy broccoli are side dish for the hamburgers. Yummy in my tummy!
My thoughts on training dogs to not bark, or to reduce barking. Its understandable if they are indoor dogs I suppose. But all my dogs have been worker dogs on my land or my families. Their barking reduces the chance of bobcats and hogs coming into our land. Which helps a lot! Our dogs also let us know when someone trespasses on our land. ❤my pups!
Roasting makes things simpler in my kitchenn, not to mention how much better foods taste when roasted! But gourmet delights await those who go the extra step! This is on the menu in my kitchen this week, just this way! And thanks for the paring tips! Over&Out!
I always eat the stalks ~ usually don't bother to peel them. Sometimes I cook them w/ the rest of the broccoli, but more often than not, I just slice and snack on it while I'm cooking. They're great dipped in hummus. Also, my dogs love raw broccoli stalks.
I def LOOOOVE me some Broccoli. Let me say, I am grateful for the tips and info you share with us. It is super helpful. I have been binge watching your vids. And, they're all PRETTY AWESOME so much YUMMINESS!! Thanks loads for sharing all of this with us. Arlene
My mother used to make a sauce for broccoli from about a tablespoon of mayonnaise and a teaspoon of white vinegar. It brought out the broccoli flavor and cut the bitterness. I loved it, and still love broccoli.
I just discovered this channel and it's honestly incredible, both these videos and I'm assuming the more recent ones with the table smacking XDXD. I love to cook and try to figure out how to extract flavor and the way you explain every detail is so educational. Very much looking forward to trying the broccoli, the potato video and brussel sprouts!! I'll have to look more into the meat recipes too:)!
Roasted veggees are what steak manipulators always fondly remember when they are serving up their master pieces!! Go get 'em Dude! You're helping many of us who went to Cuisine school and had to put up with stuck up teachers.
I've been watching your videos in my Barbershop with clients. Yesterday someone asked where your filming your videos from. I said he's got to be somewhere on the West Coast. To my surprise in this video i find you're right here in the Roaring Fork Valley Where We Are. So cheers to you neighbor. Thanks for all the awesome content.😁
I've been peeling and eating the broccoli stems for years but they almost never go into the broccoli dish. I just can't resist the temptation to eat them raw. They are delicious! As for this recipe, I bet it would be great with a few red chili flakes sprinkled over. I usually steam broccoli then toss it in extra virgin olive oil with some salt and chili flakes, a quick, easy and delicious way to prepare broccoli.
My daughter showed me a clip of yours on tiktok. I downloaded it just to watch your videos. Really happy to find the youtube channel. Thank you so much for making them, they are great. You know I luv you!!
It's much easier and less wasteful to actual PEEL the broccoli stalks as Jacques Pépin does which just requires a paring knife. Simply go to the base of the stalk, cut below the peel and then use your fingers to strip it off the stalk. It helps if you pick broccoli with thick, straight stalks. Just did this a week ago and threw the peel in a bag with some wilted celery that I used the next day for making stock (or freeze it for stock later). If you are sauteing the broccoli there's no need to even peel the stalks, just cut it up and start it cooking before the florets to give it a little extra time to break down the fibers in the stalk. A friend only eats this part and lets her BF & step son have the florets.
So glad you did not throw out the stalks. They are the best part of the broccoli. I prepare them just as you did. Now let's talk about roasted cauliflower 🤗!
Yea that would be great with the sesame oil good call. I usually go olive oil with lemon juice and garlic powder. Salt and pepper. And finish with parm.
Gotta try this…really like preserving the bright green color all the way through the roasting time. Also, I always pitched the stems. I’ll peel, slice, blanch, and roast them next time.
I've also blended the stalks a few times into a puree, it tastes just like an avocado pear when blended into a puree. I'll definitely try roasting the broccoli tonight
This is going to be my new favorite recipe, I know it. I'm just about ready to go to the grocery store here soon& I know I'm getting broccoli for dinner tonight. Thank you, great video & I subbed so I'm really looking forward to watching many more videos from this channel. 💜💚
We made this tonight as a side for our main course. The kids loved it! Soft but crunchy, YUM! Thanks for the recipe/video. I recently came across your channel and I'm thankful that I did!
Thank you!!! Nobody believes me about peeling the stems. Also, nice to know I'm not crazy for hating the stringy, woody stems. I never order it because invariably half of it is inedible.
Catching up on these old videos. It’s totally coincidental but I always seem to be thinking about what Chef is featuring. I have several heads of broccoli in the garden that need to be harvested in the next couple of days and we’ll be having lots of roasted broccoli 🥦 on the table!
Cannot wait to do this. I think the only change I will make is that I will decrease the amount of oil and then ad a tablespoon of butter for the last 10 minutes or so
Ming I just started watching this dude and then this popped up. He must’ve started using drugs or something because his recent videos have no chill lololol
I trim the stalks, cut them into matchsticks and then coat them raw in a vinaigrette of balsamic vinegar, olive oil, black pepper and sea salt. They need to be served immediately, because the salt draws out the moisture, but people go mad for them as a pre-meal snack!
I see this old video is taking off for some reason so I just wanted to come here and say the baking time may be less if you live at sea level. Roasting/baking at 6200 feet elevation certainly changes things.
I thought you were gonna give the pup a piece of the finished product, not a timeout... Can't wait to give this broccoli method a try though.
You’ve come so far with your presentation and professionalism! This was a good vid but your latest stuff is honed to a fine edge. Congrats! I love your stuff. Can’t wait to try some roast broccoli.
I'm here accidentally because I was looking for the broccoli pasta video which appears to have vanished
Was fire brotha
Yeah, water boils at 200º F instead of 212º at your altitude. How does that affect things like cooking pasta or making fudge?
The fridge was so stress free and without blemish. 😂😅
You know it flinched at 8:30
And he’s so much skinner
This is PG Sonny versus the more recent R rated Sonny.
Definitely prefer these videos :'( straight up cooking without all the gimmicks. It was far more enjoyable watching for me
This was before the fridge learned to fear.

I like this channel. No flashy bs. He visually teaches while he cooks. I never knew how to break down a broccoli stalk until today. You have my sub.
Agreed!!❤
Wholeheartedly agree. Broccoli is soooo tasty cooked in this way. And it was a pleasure seeing you using the stems. They are delicious too.
Been on a roasted broccoli rampage the past year and a half but never made it this way before! Tried it for the first time tonight and it was an absolute game changer. You're killin the game!! Cheers
I wish you good luck with the channel, you're very likeable and a certainly good cook - just keep going !
Thanks max!! Comments like yours really help!
This aged well
Lmao like a fine wine, possibly one he had served in aspen once upon a time.
He’s a classically trained chef.

On Keto right now and broccoli was on the list of food I could eat. I've always dreaded it UNTIL now! This recipes is fantastic. Thank you so so much for sharing it. I actually crave eating broccoli now!
He does a couple of wonderful recipes for Brussels sprouts too, which are really tasty!
You can see the sunshine slowly creeping in, he’s transforming before our eyes 🤩
It was like he was bored of life trying to teach cooking then realized he can do whatever he want
Love Broccoli, my favorite Vegetable!!! 🥦
its the best right! have you cooked it like this before??
Same here I love me some broccoli.
Eat it wholly saw

Kelvin's Kitchen thanks! I’m gonna go subscribe to your channel! I love Latin food and the recipes look great!
Me too
He's so thin and has hair and is still cute and clear in his cooking game!
I’ve tried your Brussels sprouts recipe already and they are delicious! I will try this next. You make me want to cook things I don’t normally want to cook. Thanks Sonny.

Anyone make this for the kids??!! I would love to hear how they enjoyed it! let me know in the comments below!!

Tried this yesterday. daughters LOVED it. Added green beans, got requests for it again today.
just made this and it’s great. kids liked it too! i never liked the stalks and now i know why.
I give my kids steamed broccoli with butter, garlic salt & Parmesan ...can’t lose. But this will give me some much needed variety-making it in 20 min!
Asians make the best vegetables! And they do a fraction of the labor. Your doing to much !
that is a lot of extra work. JUST heat oven to 400 degrees . Put broccoli in plastic bag. Pour in olive oil . Shake bag to coat broccoli . Cover cookie sheet with parchment paper. Sonny’s my guy! Thanks so much for all you do and share!
How much has his channel changed since this hahaha, 100000x better now.
Grated Grand Padano and crispy procuitto with fresh ground black pepper on top makes it dinner! 👍 😃
THANK YOU!!! You didn’t waste the best part!!
just getting into cooking. been watching a lot of channels. this might be my fav. first older vid. missing the fridge beating, but loving the ollie
so refreshing to see someone reccomend the stalk! i love using it -boiled with carrot or roasted as you did here. i wonder if you ever made crumbed califlower florets? if not please try it its a fantastic veg and even a fingerfood to serve with mini dimsum etc. just boil, cool, crumb and fry. thanks for the content been binging your channel and i love it

My boyfriend hates broccoli in all forms. Until he tried it roasted. Now he's a big fan.

I learned a lot! Trim the stalk, layer the seasonings, preheat the pan, and time outs are effective. Thanks! I Liked. I Subscribed. I Hit the 🛎 !

I am a total veggie fiend, this recipie looks awesome! I can't wait to try it!
You are such an amazing cook.....and so easy to follow. Love you!
Nice low key fork twirl there! Most impressive part.
I have been subscribed for a while. YES! I really am enjoying your recipes!
My kids love this. Been making it for a few year but will try blanching first. Also have a BlueStar. Clean that oven door though!!!
My mother used to make a sauce for broccoli from about a tablespoon of mayonnaise and a teaspoon of white vinegar. It brought out the broccoli flavor and cut the bitterness. I loved it, and still love broccoli.
I've never had bitter broccoli
Cut out the bitterness, and brought severe sourness instead 😂
the algorithm brought me here from the brussels sprouts episode. always fun to see sonny's 'older' videos
Looks delicious. I would be tempted to add a roughly chopped onion to this..
I was a weird kid. Picky eater, yet I liked broccoli and, oddly, Brussel sprouts. Go figgah.
That is interesting. My son is on the spectrum, albeit very slightly, and has the food issues. The one veg he likes is broccoli.
My son is a very picky eater as well but he likes broccoli and red onion. He won't eat any other veggies
Awesome tip about the broccoli stalks, so awesome I subscribed!
The stem of the broccoli is the best.
So is alclad. I want to try made in.
Sneaky Pete, cooking brocolli 🤣
I just discovered this channel and it's honestly incredible, both these videos and I'm assuming the more recent ones with the table smacking XDXD. The table smacking isn't the highlight here... its the FRIDGE SMACK

Love you, Sonny! Thank you for this one and sooooo many others!
I love this roasted broccoli recipe! So delicious!
Can’t wait to try this!!
The broccoli stems are fantastic julienned and with humus
I've been peeling and eating the broccoli stems for years but they almost never go into the broccoli dish. I just can't resist the temptation to eat them raw. They are delicious! I sauteed broccoli for my kids in bacon fat I never had a problem getting them to eat it in fact it was the first thing they would eat
over complicated. I simply cut it up, olive oil, salt & pepper and roast it...400 degrees and never touch it for 30 min. perfect every time.
Thank you for sharing! I hope the training has paid off for Ollie!
So glad you did not throw out the stalks. They are the best part of the broccoli. I prepare them just as you did. Now let's talk about roasted cauliflower 🤗!
I just figured out that leftover buttered broccoli tossed on a roasting pan the next day makes the easiest and BEST roasted broccoli ever
Such a great method... Love your food!
nice job, funny.
try tossing them with toasted sesame oil, a few chili flakes, light sea salt, then roast...
Yea that would be great with the sesame oil good call. I usually go olive oil with lemon juice and garlic powder. Salt and pepper. And finish with parm.
Add some garlic and chiliflakes and finish it off with some lemon juice and honey when it comes out of the oven. Super good
Found you on TikTok. Now subscribed to your UA-cam channel. What a great find! You know we love you!!!
Refers to broccoli as “good eating” like speaking about hunting game animals. 😆 Love this guy.
Your videos got much better over time..
Gotta try this…really like preserving the bright green color all the way through the roasting time. Also, I always pitched the stems. I’ll peel, slice, blanch, and roast them next time.
I am sooo gonna do this 💜☮️ Thank You again!!!
This is pure fun. I am grateful for all the cooking info. (From a dude who needs a recipe for toast and burns water.)
I've also blended the stalks a few times into a puree, it tastes just like an avocado pear when blended into a puree. I'll definitely try roasting the broccoli tonight
That awkward opening, i love it.
This is going to be my new favorite recipe, I know it. I'm just about ready to go to the grocery store here soon& I know I'm getting broccoli for dinner tonight. Thank you, great video & I subbed so I'm really looking forward to watching many more videos from this channel. 💜💚
About to try this now! Excellent video!
LOVE this easy recipe!!!
You are such and great teacher. Thank you Sonny!
Outstanding recipe! I am amazed at the complex flavor released by roasting broccoli!
Does the roasting pan need to have a non-stick surface? Can I use my stainless steel roasting pan and if so, how does it change the recipe?
John Weidenaar it will be fine!
Roasted brussel sprouts episode? I hear you fancy chefs have this mythical method of making stellar brussel sprouts
After my terriers ate broccoli, their energy was so high that the dug huge holes in the back yard.
This looks so good man!
Thanks dude you really do know how to cook! 😃👍
I've made this recipe and it's amazing I've done it a couple times now my new favorite
Who else thought he was gonna punch the fridge at 8:32 😂
I love this video thanks for making it
Canola oil is the worst oriole to use. Thanks for sharing
We made this tonight as a side for our main course. The kids loved it! Soft but crunchy, YUM! Thanks for the recipe/video. I recently came across your channel and I'm thankful that I did!
So excited to find you!!
I roast broccoli, Brussels sprouts, carrots, and green beans. My kid gobbles them up!
All of my kids loved veggies if cooked the right way!❤
you are very funny and i like how concise your videos are. thanks.
I've been making roasted broccoli for awhile now, but I think your way looks better.
Dude your a beast in the kitchen. I can’t believe the stuff I learned from you
Thank you!!! Nobody believes me about peeling the stems. Also, nice to know I'm not crazy for hating the stringy, woody stems. I never order it because invariably half of it is inedible.
BLESS THIS MAN'S PERSEVERANCE
Catching up on these old videos. It’s totally coincidental but I always seem to be thinking about what Chef is featuring. I have several heads of broccoli in the garden that need to be harvested in the next couple of days and we’ll be having lots of roasted broccoli 🥦 on the table!
