I do clearly understand Vincenzo concern in the start. You do so often see media celebrity cooks putting their "improvements" on things, or they combine ingredients as their "artistic" expression. And you end up blended Peking duck on white bread deep-fried in palm oil. :-)

I think because most westerners can't read pinyin properly, they probably will pronounce it "bay-jing" instead of "pay-cing"... so they used the old romanization instead

My favourite part of the porchetta is the crust, those are the ummmmph of the dish, same for the Beijing duck which always have that super sharp savoury flavour on their skin. Absolutely love Beijing duck as how my grandma used to make it as a half-Hainanese myself.

Both Chinese and Italian foods have their own unique flavors. They both cannot be intermixed. One does not go with the other. Each kind of foods has a long history of traditions passed down by multiple generations.
