There are many manufactures that does that kind of knife. This one is Leone curved knife. it is in the kit o give to my 1 year program students.

I noticed that the Knives you showed, all have straight cutting edges. Do you ever use a blade with a curved edge?
I think you did not watched the video :) the main knife I was showing and recommended was a curved knife.
